Bacon Waffles

Ingredients

  1. Nonstick cooking spray
  2. 2 cups all-purpose flour
  3. 3 teaspoons baking powder
  4. Kosher salt
  5. 2 large eggs, separated
  6. 1 1/2 cups milk
  7. 3 tablespoons unsalted butter, melted
  8. 6 slices bacon, cut in half
  9. Maple syrup, for serving

Instructions

  1. Spray a waffle iron with nonstick cooking spray and preheat it.
  2. Sift together the flour, baking powder and 1/2 teaspoon salt in a medium bowl. Beat the egg whites in a second medium bowl until stiff.
  3. Beat the egg yolks with the milk and butter in a large bowl. Add the flour mixture, stirring until just blended. Fold in the beaten egg whites.
  4. Place 2 halves of a bacon slice in each waffle grid and close the cover. Cook for 1 minute and then add a scant 1/2 cup batter to each waffle grid. Bake until golden brown, about 5 minutes. Serve with maple syrup.

It made a nice consistency but it was bland as all get out and most (if not all) the flavor came from the bacon. It’s a good recipe for fluffy waffles but be sure to add about 2 tsp of vanilla accent and around 1/3 cup of granulated sugar to your batter.

Made these for Father’s Day this morning with my kids.  Followed the recipe except I cut the cooked bacon up and folded into the batter.  I used my little Dash waffle maker and made 12 waffles.  We’ll be making these again.

The secret to a great batter is Whipped Egg Whites, then gently Folding into the batter. I purchase a Thick Bacon, cut away Much of the Fat. Semi bake in oven on a parchment lined sheet pan,Or you can use a microwave for this.

Holy all thing bacon!! There’s no way you could mess this recipe up! I do suggest that you pour some of the bacon grease off from your waffle iron if you’re cooking for more than two people.

I Halved this recipe for my husband and me. They were easy to make but did require a lot of bowls etc. for prep which was annoying. To get the bacon to brown I had to turn my waffle maker on high. I like the idea of pre-cooking the bacon in the microwave to avoid excess fat. Halving the recipe made 3 whole waffles which was perfect for us. Also when I sieved the flour mixture, the kosher salt didn’t go through. Will use table salt the next time. Definitely worth making.

These are absolutely the best waffles I have ever had! The egg whites make them melt-in-your-mouth delicious. The only change I made was with the bacon. I feared the waffles would be too greasy, so I put bacon on paper towels and in the microwave for 30 seconds to remove some of the grease. Worked perfectly. These waffles are well worth the extra dishes and time to clean bottom of iron of bacon residue. Thanks, Trisha

This does work in a regular waffle maker.  Adjust the time cooking your bacon before adding the waffle batter.  The bacon doesn’t really cook further once you add the batter.  These are fabulous!
