Spaghetti with Parsley Olive Oil Sauce

Ingredients

  1. 1 pound of spaghetti or any other thin pasta
  2. 1/2 cup (packed) fresh parsley leaves
  3. 2 cloves garlic
  4. 1/2 cup extra-virgin olive oil
  5. Salt and freshly ground black pepper to taste
  6. Parmesan cheese-optional garnish

Instructions

  1. In a large pot bring water to a full rolling boil. Meanwhile, rinse, pat dry, and mince the parsley. Peel and mince the garlic. When the water is ready, add your pasta. Remember start your cooking time when the water returns to a boil, not when you add the pasta. Cook your pasta according to package directions, drain in a colander and transfer to a serving dish To make the sauce; in a skillet heat olive oil. Add garlic and cook until fragrant. Then add the parsley and remove from heat. Season to taste with salt and pepper. Add sauce to the past and toss to combine.

Very simple and fast. I added diced sun dried tomatoes, red chili flakes and broccoli. My husband said it was the best pasta I have made so far and he is pretty picky.

I added more garlic of course and added Broccoli & red peppers for color. Grilled chicken on top of the pasta and served with wine. Great looking plate and absolutely delicious! This was so easy and we both loved it. I will use this recipe with shrimp as well!

This was simple and so GOOD!! My kids loved it! I think I may add grilled chicken to it next time. I also used whole wheat angel hair… added a tiny bit more olive oil, and topped with parmesan. We will make this again.

I really did not need the recipe to make pasta, but the sauce is to die for. It is very similar to a local resturants special sauce called “Hot Naked”.

It is a very simple recipe. It takes about 5 minutes to make, but tastes like you spent hours in the kitchen preparing it!! You must try it at least once.
