Ingredients

  1. 2 cucumbers, thinly sliced
  2. 3 scallions, thinly sliced
  3. 1/3 cup rice wine vinegar
  4. 2 teaspoons sesame oil
  5. 2 tablespoons lime juice
  6. 2 tablespoons minced ginger
  7. 1 tablespoons minced jalapeno
  8. 1/4 cup cilantro leaves
  9. 2 tablespoons sugar

Instructions

  1. In a large bowl, combine all ingredients. Serve immediately.

I tried out this recipe with some reservations on the cucumber and asian inspired ingredients. Turned out great and the family loved it. I made some minor changes and used a red onion vice the scallion. Would go great with an asian inspired dish or scooped up with some crispy won-tons.

This is a really great salsa to serve with grilled chicken. It’s very light and fresh tasting
