Ingredients
- 1 cup cold water
- 1 cup yellow cornmeal
- 3 cups chicken broth or water
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup grated smoked Gouda
Instructions
- In a small bowl, combine cold water and cornmeal. Let stand 5 minutes. Meanwhile, in a medium saucepan over medium-high heat, combine chicken broth, salt and pepper. Bring mixture to a boil. Gradually whisk in cornmeal mixture and reduce heat to low. Cook 20 minutes, stirring frequently with a wire whisk, until mixture is thick and creamy. Stir in smoked Gouda and simmer until cheese melts, stirring constantly.

I make it with normal gouda though since I’ve had a little trouble fining the smoked in my area. and i always add too much of it 😉

I’m not sure if there was too much polenta…but this was so bland and gross. I didn’t use smoked gouda, but regular…which shouldn’t have made a huge difference. I kept the leftovers to see if I could play with it and add stuff so it could get some flavor! Yuck!
This was my first time making polenta and it will not be my last. This is so easy and the taste is great.
This has become one of my families favorites!!! The flavor of the smoked gouda is wonderful in this recipe
