Chayote Salad

Ingredients

  1. 6 Chayote (a.k.a. Chocho, or Christophine), peeled and thinly sliced
  2. 2 yellow peppers, julienned
  3. 1 red onion, thinly sliced
  4. 1/4 cup cilantro, chopped
  5. 1 lemon, juiced
  6. 1/4 cup white wine vinegar
  7. 1 cup peanut or vegetable oil
  8. Salt and fresh ground pepper, to taste

Instructions

  1. Toss together in a bowl. Turn out onto a platter and sprinkle with more salt and pepper.;

Excellent recipe! I used key lime instead of lemon, everything else the same. I will try it again!
