Black Bean Burgers

Ingredients

  1. 2 cups canned seasoned black beans, drained
  2. 1 cup seasoned breadcrumbs
  3. 1/4 cup grated onion
  4. 1/2 teaspoon chili powder
  5. 1 large egg
  6. Salt and freshly ground pepper
  7. Canola oil, for the pan
  8. 4 slices Swiss cheese
  9. 1/2 cup mayonnaise
  10. Hot sauce
  11. 4 burger buns, toasted
  12. Lettuce and sliced tomatoes, for topping

Instructions

  1. Mash the beans.
  2. Using a fork, mash the beans in a medium bowl until they are mushy but still have some whole bean pieces throughout.
  3. Make the burger mixture.
  4. Mix the breadcrumbs, grated onion, chili powder, egg and some salt and pepper into the beans. Add a splash of water if the mixture looks dry. Set aside for 5 minutes. Preheat a large cast-iron skillet over medium-high heat and add a few tablespoons of canola oil.
  5. Form the patties.
  6. Divide the bean mixture into 4 equal balls and form into 4 nice, neat patties. Black bean burgers don’t shrink when they cook, so whatever size you make them when they go into the skillet will be the size they are when they come out.
  7. Cook the burgers.
  8. Cook the burgers until browned, 4 to 5 minutes on each side. Add a slice of Swiss cheese to the top of each burger. Invert a second skillet on top of the first skillet and continue cooking, 2 minutes, until the cheese is melted.
  9. Top the burgers.
  10. Combine the mayonnaise and some hot sauce in a small bowl. Serve the burgers on toasted buns with the spicy mayonnaise, lettuce and sliced tomatoes.

I LOVE this recipe! I’m sometimes a vegetarian, and this is one of my go to recipes when I’m trying to cut the meat. I’ve made a couple of small substitutes: 1) instead of tomato, I added avocado, 2) instead of the spicy Mayo, I added Chick Fil-a sauce, and 3) used smoked Gouda cheese. This tastes like a gourmet burger!

Not a great recipe. I don’t see how anyone could mistake this for a regular beef hamburger. It wasn’t that flavorful either.
