Ingredients
- 2 cups thinly sliced white cabbage
- 2 cups thinly sliced red cabbage
- 1 medium carrot, washed and grated
- 2 teaspoons caraway seeds
- 2 tablespoons flat-leaf parsley, finely chopped
- 2 tablespoons Dijon mustard
- 1/4 cup cider vinegar
- 1/4 cup extra-virgin olive oil
- 1 teaspoon freshly squeezed lemon juice
- Pinch of sea salt and freshly ground black pepper to taste
Instructions
- Combine the cabbage, carrot, caraway seeds and parsley in a medium salad bowl. Whisk the dressing ingredients together in a small bowl. Drizzle the dressing over the coleslaw mix, then season with salt and black pepper to your taste, and toss well.

It was too sour. I added good old unhealthy sugar and a little onion. I doubt if I make it again
Made this for a pot luck birthday dinner and it was a huge hit! So many fresh delicious flavors and colors. The dressing was fantastic. It didn’t have a strong mustard flavor and coated the veggies perfectly.
This was really tasty. Like Sue W., I was glad to try a slaw that wasn’t mustard-based. I wasn’t sure I’d like the caraway seeds, but it all worked well together. I’m not a vegetarian, but we eat lots of veggies, so I’m looking forward to more of these episodes. Love Mary’s English accent and anecdotes!
Sounds perfect but I have family who don’t like mustard. If it’s hidden in a recipe, it’s fine. How subtle is the mustard taste in this dressing?

The caraway seeds add a different flavor that separates this recipe. I love that it’s not mayonnaise based.
