Any Bean Burgers

Ingredients

  1. 1 cup canned beans, such as pinto, kidney or black beans, rinsed and drained
  2. 1/2 cup walnuts
  3. 1/2 cup panko breadcrumbs
  4. 1 teaspoon kosher salt
  5. 1 teaspoon onion powder
  6. 1/2 teaspoon garlic powder
  7. 1/4 teaspoon freshly ground black pepper
  8. 1 large egg, lightly beaten
  9. 3 tablespoons BBQ sauce
  10. 1 tablespoon olive oil
  11. 4 slices your favorite cheese, optional
  12. 4 burger buns
  13. Desired toppings, for serving

Instructions

  1. In a food processor, pulse the beans until coarsely chopped, then transfer to a large mixing bowl. Pulse the walnuts in the food processor until finely chopped, then transfer to the mixing bowl with the beans. Add the breadcrumbs, salt, onion powder, garlic powder, pepper, egg and 2 tablespoons of the BBQ sauce and mix well. Divide the mixture into 4 equal parts. Shape into burger patties and refrigerate for 30 minutes.
  2. Heat a nonstick skillet over medium-high heat. Add the olive oil. Brush the top of each burger with the remaining 1 tablespoon BBQ sauce. Cook the burgers BBQ sauce-side down for 3 minutes. Flip and top each with a slice of cheese if using. Cover and cook until the cheese is melted and the burgers are heated through, about 3 minutes. Place the burgers on the buns and top with desired toppings.

Really wasn’t anything special. I’ve def had better veggie bean burgers. When I eat the leftovers it will be in a tortilla with salsa, etc.

These are easy to make and tasty. I did find that after brushing barbecue sauce on burgers, they burn a bit probably because of the sugar in the sauce. I may skip that next time.

I made this burger tonight for the first time. It was outrageous. Great smoky flavor, nice texture and a flavor burst in my mouth. I will definitely be added to our meatless rotation.

Katie strikes again! This is delicious. I used black beans and formed into “beanballs” and baked in oven for 20 minutes at 350 degrees flipping halfway thru. They had a perfect crunch to the exterior. I didn’t used the extra bbq, but might when I reheat in microwave in case they’re too dry at that point. I will definitely be making this again!!!

I love this recipe! Super easy and very versatile. Tonight I am making an Italian version using white northern beans, Calabrian peppers, roasted red pepper, diced olives and Parmesan and provolone. Made these last night and we both loved them! I made mine like I would a regular cheeseburger (american cheese, mustard, lettuce, tomato, and pickle), my husband made his along the same theme as well-and he was a skeptic, but I have been breaking him in slowly to reduce our red meat consumption. I made this to the recipe exactly, except I made 3 patties instead of 4, also butter and toasted the buns in the skillet. DELICIOUS. Next time I will add pickled onions, but I was out.

Not a great taste without a bunch of condiments.  Not sure if it was the walnuts, but something wasn’t right and I followed all of the directions and used pinto beans.
