An alternative to the typical Nanaimo Bar. This one is named after my lovely daughter.

Ingredients

  1. 8 medium yellow squash, shredded
  2. 1 onion, shredded
  3. 1 ½ tablespoons salt
  4. 1 cup shredded Cheddar cheese
  5. 1 cup all-purpose flour
  6. ½ cup cornmeal
  7. 1 egg, lightly beaten
  8. ground black pepper to taste
  9. 1 tablespoon vegetable oil, or as needed

Instructions

  1. Place squash and onion in a colander; sprinkle with salt and drain until no longer moist, about 30 minutes.
  2. Mix squash and onion mixture, cheese, flour, cornmeal, and egg in a bowl; season with pepper.
  3. Heat oil in a skillet over medium heat. Drop squash mixture by heaping tablespoonfuls into the skillet; cook patties until golden brown, about 3 minutes per side.

I’m making this recipe tonight. kinda/sorta) I’m going to use Italian style bread crumbs in place of flour and cornmeal. Will add various herbs, garlic, and sauteed onion. Will let you know how it goes. Giving it a five star rating as I love the idea of the fried summer squash.

I loved the recipe. I used 1/2 red onion 1/2 sweet onion, mild cheddar cheese and black pepper. I thought they were delicious. I put nothing on them. I did grate and salt them. I left them sit for a hour.I had alot of water come out, I also squeezed in a towel, alot more came out. Made like recipe said with cornmeal flour and egg. YUMMY, YUMMY

It was wonderful. I was out of flour but I used cornmeal mix which is a mixture of flour and cornmeal. Since I am from the Gulf Coast, I used Creole Seasoning instead of salt and pepper. They were crispy on the outside and tender on the inside. I will be making this again.

Fantastic dish. Made as is. (added a bit of garlic powder) but I squished out to much of the liquid so when I reheated leftovers they were a bit dry. My fault, a learning experience. I cut recipe in half and made 12 large patties. Will definitely make again as is. I will also experiment adding a bit of corn. I think it was the addition of the corn meal that made that added difference. Great dish.

Great Recipe and it’s fun to change it up a bit. It’s pretty important that you get the liquid out of the squash and onion mix. A colander isn’t going to work. My suggestion is to grab a baseball sized handful and just squeeze out the liquid. You will be shocked to see how much liquid you get out. I made this according to directions only adding some crunchy adobo jalapeños. Added yellow cornmeal first, hand mixed it. Added some premixed chicken flour. Hand nixed it. Came out great. Ranch dressing was ok wish I would have had sour cream.

I made as directed EXCEPT I squeezed the squash to remove excess water, drained on paper towels then shredded the squash. I believe these steps if included in the directions would be a great help to the novice. BTW…..so much better than fried squash!

I didn’t use as much flour. I just dusted the flour over the squash. We like the crunchy cornmeal. I also used a cookie dough scoop to put in the pan. Fast and no mess.

I chopped the onion and didn’t have any cornmeal. They cooked up pretty soft but that may have been the absence of the cornmeal. I’d make them again.

Downsized it since I only needed to feed two and had only two squash, worked great! Family loved it, even the avowed squash-hater said it was good. DH said to get more squash. Definitely a keeper.

I only used flour in mine only because I did not have any cornmeal. I also omitted the cheese. My patties turned out rather large and I also had to use more than 1 T of oil to cook them. Next time I will try putting some garlic in them and making them smaller.

Made this tonight. It was very good and easy recipe. Will make again and omit the salt. Will either shred and let drain longer or use a cheese cloth. Way too salty for us.
