This taco salad is straightforward and easy to make. My two and six-year-old children are in love with this! I’ve made it both ways: with beef and two boneless chicken breasts. Both are a huge hit and quite simple. I also used it for a Super Bowl party, and everyone loved it!

Ingredients

  1. 2 slices bacon
  2. 2 medium yellow squash, thinly sliced
  3. ½ medium onion, thinly sliced
  4. 1 jalapeño pepper, chopped (Optional)
  5. 1 dash soy sauce
  6. salt and pepper to taste

Instructions

  1. Cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels, reserving bacon drippings in the skillet.
  2. Add squash, onion, and jalapeño to the skillet. Fry until tender, but still firm, stirring frequently. Crumble bacon into the skillet; season with soy sauce, salt, and pepper. Stir to blend in seasonings and serve.

Very tasty. I just happened to have enough of the ingredients on hand to easily double this recipe which I followed to the letter ( I only changed slicing thinly to cutting smallish chunks as shown by several of the pictures others have provided in order to cook more evenly). All in all, extremely easy to put together and made the squash flavorful. Thanks for this one.

This was fantastic! I made changes and will make more next time. The bacon and jalapeño with soy sauce is spot on for flavor. I would make my zucchini and squash slices larger next time because they cooked too quickly. Once I added the bacon, I sprinkled it with cheddar cheese and popped it in the broiler for a minute. It was beautiful in the pan, but hard to plate and didn’t look appetizing. My husband saw it and told the kids, “Your mom is dieting so we starve too”. But after one taste he turned around completely. He loved it and would like to have it again! I made this as a main meal with a side salad and dinner roles. Nice and light. I was able to get my husband to actually eat squash with this recipe. I made it as a side dish to bbq brisket and pork. I used fresh onion and jalapeño from the garden. It was very good.

Didn’t have jalapeno. But I added minced garlic and fresh chopped basil. Next time, I’ll sprinkle freshly grated parmasean on top. This is also a great keto recipe.

I’m allergic to bell peppers so I did not use bell peppers but just the bacon in the squash and I added diced onion with a little salt and pepper it turned out really soggy on The Middle and quite chewy on the outside like it wasn’t cooked but it also was very greasy and unfortunately even with the bacon it did not have much of a taste to I plan on giving it a try again but probably not immediately

We love this recipe. I think it is the touch of soy sauce at the end that makes it great! You can adjust it to your liking. I didn’t have bacon so substituted with butter. Mushrooms and garlic are a nice addition. The jalapeño pepper provided the right amount of spice. I have made this recipe three times in the last week.

Really loved this but I changed it around a little. I left out the soy sauce and Jalapeno and added Banana peppers instead and it turned out great.

I thought this was delicious and my husband liked it but still prefers my old recipe! I did not have soy sauce nor jalapeños although I improvised with only 3-4 chopped slices from the jar! I would definitely make this again! Next time I might try adding some garlic as a couple of reviewers suggested!
