Twice-Baked Cauliflower

This dish was amazing even though it was vegetarian and without onions. Even my wife, who despises cauliflower, enjoyed it! Serving the food with freshly cracked pepper enhanced the flavors.

Ingredients

  1. 1 large head cauliflower, cut into florets with stems cut into bite-size pieces
  2. 1 cup shredded Cheddar cheese, divided
  3. ½ cup reduced-fat sour cream
  4. 4 ounces reduced-fat cream cheese, softened
  5. ¼ cup grated Parmesan cheese

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until very tender, about 5 minutes.
  3. Transfer cauliflower to a bowl and mash with a potato masher until few chunks remain; add 1/2 cup Cheddar cheese, sour cream, cream cheese, and Parmesan cheese and mix thoroughly. Spread the mixture into a 8-inch square casserole dish; top with remaining Cheddar cheese. Cover dish with aluminum foil or lid.
  4. Bake in preheated oven until hot and bubbling, 20 to 25 minutes. Remove cover and continue baking until the top is browned, about 10 minutes more.

Loved this. Used leftover roasted cauliflower because what else am I going to do with it? Diced it up, added the cheeses and sour cream, and baked as directed. Topped with bacon and chopped green onions. Served with grilled New York strips. Loved it very much!

Actually decently good! Is it something I would crave and make my mother water… no. But it is a passable substitute for potatoes. It was easy to make and I added some crumbled bacon to add to the twice baked theme. I would make this again.

Loved this! We are doing the Keto diet and used full fat sour cream and cream cheese. I did put salt and pepper before baking. Also sprinkled some bacon bits and green onion on top. Family love bed it. Thank you for sharing this recipe,

great recipe! I have made multiple times and it’s very easy to make a quick throw together side. it can be made as written or you can easily cheat if your not in the mood to cook. I love fresh however any cauliflower you have can be cooked then I throw everything in my ninja, dump in a casserole dish and cook. I put on broil last few minutes to harden top. I do add some minced garlic and season to taste. great recipe!

It wasn’t bad. I would add more cream cheese and beat the cauliflower differently to get it smoother. I added onion, garlic (will add more next time), a little 1/2 & 1/2. Next time I’ll also add some sour cream.

I didn’t use any reduced-fat ingredients. I, also, added chopped onion, 1 glove garlic, 1/3 red bell pepper, 1 tb. basil, salt and pepper. When mashing the cauliflower, I added 2 tb. of butter. I substituted cheddar with pepper jack cheese for a little more kick. It was so good! Thanks for the idea.

Used 2% cheddar cheese, but other than that, made no change to the recipe. First, don’t think of this as a substitution for mashed potatoes because you’ll be disappointed. You never can get mashed cauliflower the same texture as mashed potatoes. However, this is a very nice cauliflower side dish, loaded with flavor. We did add salt and pepper at the table, so I’d probably add that before baking next time, but other than that, wouldn’t change a thing. We’re not vegetarians, but we enjoyed this vegetarian side dish! Rachel, thanks for sharing!
