Ingredients
- cooking spray
- 4 pounds yellow squash, sliced
- ¼ cup butter
- ½ cup chopped onion
- 1 (10.75 ounce) can cream of mushroom soup
- 1 cup Cheddar cheese
- 1 cup seasoned bread crumbs
- ½ (10.75 ounce) can milk
- ½ cup mayonnaise
- 1 teaspoon white sugar
- 2 eggs, beaten
- salt and ground black pepper to taste
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Spray a 9×13-inch casserole dish with cooking spray.
- Bring a large pot of salted water to a boil; cook squash in the boiling water until very tender, 10 to 15 minutes. Drain and transfer squash to a large bowl; mash until evenly smooth.
- Heat butter in a skillet over medium heat; cook and stir onion in the melted butter until tender, 5 to 10 minutes. Mix onion, cream of mushroom soup, Cheddar cheese, bread crumbs, milk, mayonnaise, sugar, eggs, salt, and pepper into mashed squash. Spread mixture evenly into the prepared casserole dish.
- Bake in the preheated oven until bubbling and edges are lightly browned, 45 minutes to 1 hour.
- Casserole can be covered and refrigerated several hours or overnight before baking.

Doubled the cheese, 2 cloves of garlic. baked for two hours (I used really wet steamed squash) Didn’t even have to add meat for my meal, it was that good.
I omitted sugar and added an egg, more bread crumbs, and more cheese. My family loves this. And no one in my family likes summer squash.
My neighbor always brings us a ton of squash and I never know how to use all of it. This was the perfect recipe for it. My whole family LOVED it!! I may try sharp cheddar next time just to give it a little zing but this was an incredible recipe!

My whole family loved this casserole even my young grandkids. I added garlic and extra and onions and some zucchini squash. I have made this 4X now and the opinion of my family is this is the best casserole of all the squash I have cooked.Also added extra cheddar cheese and whipped it with a mixer. My vote is a 5 star. Decreasing the milk from the original 2/3 can to 1/2 can improved the consistency .
I haven’t eaten squash in over 30 years but I made this for my son. It smelled Great so I tried it and FELL IN LOVE! I have given some to friends and they said it’s the best squash casserole they’ve had! Great recipe!

It was a split decision- those of us who like squash really liked this casserole, the ones who didn’t- not so much. I think the texture was nice, and the flavor was great.
