Ingredients
- 2 cups frozen whole-kernel corn, thawed, divided
- ½ cup water
- ½ cup cornmeal
- ⅓ cup white sugar
- 5 tablespoons margarine, softened
- ¼ cup masa harina
- 4 teaspoons milk
- 1 teaspoon baking powder
- ½ teaspoon salt
Instructions
- Blend 1 cup corn kernels, water, and cornmeal in a blender or food processor just until smooth.
- Mix sugar, margarine, and masa harina together in a medium bowl until light and fluffy. Stir in blended corn mixture. Mix in remaining 1 cup corn, milk, baking powder, and salt until smooth.
- Pour tomalito batter into the top of a double boiler over simmering water, and cover tightly with aluminum foil. Steam until firm, 50 to 60 minutes, checking water level occasionally and refilling if necessary.
- Stir pudding before serving to give it a consistent texture. Serve in small scoops.

I halved the recipe and steamed it in two 6 ounce ramekins for 30 minutes. They came out of the ramekin perfectly and tasted super moist and delicious.

Super easy to make and tastes great. Thanks to reviewers for adding the microwave instructions (30% power for 7 min, 100% for 4 min) and tip that masa harina is simply corn flour.
I used canned corn instead of frozen, and I think that added too much sweetness for me. Next time, I would use less than a 1/4 cup sugar if using canned corn. Otherwise, the whole family loved it.
Followed exactly and used the microwave method. I find it not quite sweet enough but still just like Chevys.

Cooked it in microwave, turned out delicious! Everyone from toddlers to old folks loved it. Pan was scraped clean both times I made the recipe, so not sure how leftovers would taste but I’m guessing they’d be awesome too.
I baked in the oven at 325 for an hour. It tasted awesome and I will be making it again!
This tastes just like Chevy’s recipe! I was so happy I could finally make this at home! I usually talk my kids out of theirs at Chevy’s because it’s my favorite! Like Mckarin’s review suggested, I followed the microwave instructions, covered for 7 min at 30% power then 4 min at full power, and it turned out perfect in just 11 minutes!
I made this twice and though the taste was good, the texture came out slightly gritty so, not sure what I may have done wrong. I followed the recipe and measurements as listed. I’m wondering if maybe instead of using the Maseca (= name brand) ‘MASA instant corn mix flour’, I should use the ‘Maseca’ corn masa flour which is a fine powder (like regular flour). Anyone else have this happen to them?
I followed the suggestion of another reviewer and cooked in the microwave. I cooked on low for 7 minutes and on high for 5 1/2 minutes. Sure beats using the stovetop method. Absolutely delicious!

Came out great! I used all ingredients as listed, but I through it all in a blender less 1 cup of corn which I folded in. Poured it into a pan, microwaved at 30% power 4 minutes, then on high for 8.

I have made this many times. It is wonderful and a great side dish. it is easy and kids love it. Great with any Mexican food, pork chops, chicken or fish.

Oh, this recipe turned out amazing! I have loved this dish, and always ask for seconds in the restaurant, and to be able to make it myself is a blessing. I followed this recipe to the letter and it was perfect.
I was looking for the side dish served at Chevys and this was it! Followed recipe as written, but didn’t have any foil for steaming so I cooked in microwave… 5 min at 30% and 2 min at full power. Let it sit for a while. Great side!
