Ingredients

  1. 2 slices bacon
  2. 4 small crookneck (yellow) squash
  3. ¼ cup chopped Vidalia® onion
  4. 2 tablespoons white sugar
  5. 1 tablespoon salt
  6. 2 teaspoons ground black pepper
  7. 1 cup water, or as needed to cover

Instructions

  1. Cut bacon into 1/4-inch thick strips (lardons). Slice squash and set aside.
  2. Cook bacon lardons in a saucepan over medium heat until crispy, 5 to 7 minutes.
  3. Add squash, onion, sugar, salt, and pepper to the bacon and bacon grease. Add enough water to cover and cook over medium-low heat for 45 minutes. Much of the water will evaporate; add more if needed.

Made this as written. Great flavors, but the salt and pepper were too strong for me. Reduce those amounts by at least half in my opinion.
