Scrambled Cauliflower – Low Carb

The late Iris Perez gave us a fantastic flan recipe. It has Mexican roots. Replace two of the eggs with eight ounces of cream cheese for a thicker, cheesecake-like texture.

Ingredients

  1. 1 head cauliflower, cut into florets
  2. ½ cup shredded Cheddar cheese
  3. ½ cup grated Parmesan cheese
  4. 2 large eggs, beaten
  5. ½ teaspoon cayenne pepper, or to taste
  6. ¼ teaspoon salt, or to taste
  7. 2 tablespoons butter

Instructions

  1. Place cauliflower into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 7 to 10 minutes. Drain.
  2. Mash cauliflower in a bowl until smooth. Beat Cheddar cheese, Parmesan cheese, eggs, cayenne pepper, and salt into cauliflower.
  3. Melt butter in a skillet over medium-high heat. Pour cauliflower mixture into hot butter and cook until golden, about 5 minutes. Flip cauliflower mixture; cook and stir until mixture is more crumbly than creamy, about 10 minutes more.

My husband and I loved this exactly as written, plus some garlic. We can’t wait to make again adding Spicy sausage, bacon or ham. I served it as a light meal with sauteed spinach on the side. Next time I will add the spinach right in with meat and top with sliced green onions. Terrific if you are eating low carb or not.

I like cauliflower so this was appealing to me and it was a spin on scrambled eggs. I added a little spinach as that is how I do my eggs.

I have an egg allergy so this is actually a really healthy thing for me to do because the ratio of eggs to vegetables is really low. I added in two bell peppers one orange and one green and put a sprinkle of pepper on top. Cayenne is a really nice kick if you like spicy you’re good to go if you don’t like spicy cut that back for sure!

I discovered by accident how awesome cauliflower is with eggs. I often make morning frittata’s with whatever veggies I have leftover and once all i had was cauliflower. Who knew? If you don’t mind your cauliflower with a little more bite, vs mashed, you can rice it and saute it in the pan without boiling, then add the other ingredients. This is so versatile can can be spiced up with any type of cheese, seasoning, protein, other veggies. A winner for breakfast, lunch or dinner!

Pretty good! First time experimenting with Cauliflower and really enjoyed the out come. I did change the cheese and used Low Fat Feta and no parmesan . Because of that it didn’t turn golden but it was still very yummy! Also cooked in some kale with it and it mixed nicely.

If eating for a ‘breakfast’ egg scramble then it’s what I would expect. I added onions, garlic and raisins for a little more flavour. Could experiment a little more and will do when I make it again.

Ever since I started a low carb way of eating,( never diet!), I have been on the hunt on Allrecipes, as well as elsewhere, to find delicious low carb dishes and this one fits the bill! To this dish I added a sprinkling of sharp chedder cheese,green onion and cubed,(no sugar added) breakfast ham. Even my califlower despiser hubby liked it!

I made this last night and followed the recipe to a “t”. It was terrific! I served with a nice grilled rib eye, another All recipe suggestion for zucchini pasta, a watermelon/blueberry salad with balsamic vinegar, and a delicious Greg Norman 2016 Paso Robles cabernet. It was a very nice meal enjoyed by all involved.
