Ingredients
- 1 large head cauliflower, sliced lengthwise through the core into 4 steaks
- ¼ cup olive oil
- 1 tablespoon fresh lemon juice
- 2 cloves garlic, minced
- 1 pinch red pepper flakes, or to taste
- salt and ground black pepper to taste
Instructions
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper. Lay cauliflower steaks on the prepared baking sheet.
- Whisk olive oil, lemon juice, garlic, red pepper flakes, salt, and black pepper together in a bowl. Brush tops of cauliflower steaks with 1/2 of the olive oil mixture.
- Roast cauliflower steaks in the preheated oven for 15 minutes. Flip and brush tops with remaining olive oil mixture. Continue roasting until tender and golden, 15 to 20 minutes more.

It was crumbly cauliflower as the steaks fell apart. It was most delicious and my husband said it’s a keeper!!
I followed other reviews and doubled the olive oil recipe. There was too much oil, so next time I would use less. I also added lots of crushed peppers and garlic. After 15 mins on each side at 425 degrees, I put lots of parmesan cheese on and put in for another 8-10 minutes. It was delicious and even my child who doesn’t like cauliflower liked it! Next time I’ll not cut the cauliflower into steaks and will cook chunks instead (not the stem necessarily) to get a more even cook and to absorb more of the flavour.
Absolutely LOVED it. I did add extra lemon juice and red pepper flakes. Served with salad and avocado. This recipe will be a great addition and prepared often.

A little light on the spices for me… Next time, I will double up ( except for s/p)….Also, I’d do 425 degrees to get them to brown/show some color. But all in all, great… Slice them thick, keep the nubbies and put them on the tray too!

Healthy and Delicious recipe!!
I make this in the air fryer. 5-6 minutes a side at the suggested 400 degrees. It puts enough crisp on the cauliflower to make it caramelize just a bit. You have to watch it…it’s doneness needs to be adjusted based on the cauliflower or your air fryer. You can even put a slice of cheese or sprinkled shredded cheese on them for the last minute of baking

Love the flavors! This was my first time trying cauliflower steaks, so I have nothing to compare them with. I echo what others said – it’s difficult to get 4 whole slices out of even a large head. I was very careful, but nonetheless got only one “steak” plus a lot of larger chunks and pieces. But that’s okay, because the chunks, (which had more surface area to catch the sauce + brown) had more flavor than the steak. While I really like the presentation of the “steak” — and it looked fantastic with roasted pepper strips, kalamata olives, Parmesan and chopped fresh parsley on top — I may just aim for chunks next time. Again, love the recipe. Thanks so much for sharing.

We liked this recipe as we love cauliflower. One star off as I think you need to more garlic and maybe just more marinade overall, unless my cauliflower was too big? I also got only two steaks by the time it was all cooked, as all the others came apart. Will make again as I like the marinade but may try to just use cauliflower florets next time.
Easy & tasty. Did not get crispy for me, but perhaps my slices were too thick. I used paprika instead of red pepper flakes and added some fresh thyme, .. just flavor preferences.
Easy and fast. We enjoyed them. You’ll need to cut the cauliflower thick or it will fall apart as you move it. I only got two good “steaks” per head of cauliflower. I served with a lemony aioli. I save the left over pieces and chunks of cauliflower to make cream of broccoli and cauliflower soup the next night.
