Riced Cauliflower Fiesta Flats

These veggie-packed fiesta flats employ fajita seasoning and riced cauliflower as flavoring shortcuts! Veggie version of taco night.

Ingredients

  1. 1 package Ortega® Fiesta Flats™
  2. 2 (12 ounce) packages Green Giant® Riced Veggies Cauliflower
  3. 1 (1.25 ounce) package Ortega® Fajita Seasoning Mix
  4. 1 large orange bell pepper, diced
  5. 1 cup shredded red cabbage
  6. 1 tablespoon Chopped green onions

Instructions

  1. Cook riced cauliflower in a large skillet for 5 minutes. Add fajita seasoning and stir until combined.
  2. Add diced bell pepper to skillet and cook until warmed.
  3. Fill each Fiesta Flat with the cauliflower-bell pepper mixture.
  4. Top each taco with cabbage and chopped green onions.
  5. Serve taco mixture into any Ortega(R) taco shell or tortilla.
