This Greek dish will help you escape the summer heat. Makes a big amount that’s great for picnics, gatherings, or just keeping to yourself. Approximately 4 days in the refrigerator. You can prepare this well in advance and it is very great for summer gatherings and parties.

Ingredients

  1. 1 large head cauliflower, cut into large chunks
  2. 2 tablespoons extra-virgin olive oil
  3. salt and ground black pepper to taste

Instructions

  1. Place cauliflower chunks in a food processor and pulse until broken down into pieces the size of rice grains.
  2. Heat olive oil in a skillet over medium heat; add cauliflower “rice,” salt, and pepper. Cover the skillet and cook until heated through, 3 to 5 minutes. Remove the lid and fluff with a fork.

I have two people in my family on Keto, and have been looking for a nice alternative to rice to serve with stews, etc. I was tentative about trying cauliflower rice again, having had a bad experience using the frozen riced cauliflower in the past, and my food processor is on the fritz right now. I found a bag of fresh pre-riced cauliflower from the produce section at my grocery store, and decided to give this recipe a go. I noticed that other reviewers added chopped onion to it with some success. I added a few chopped scallions, since I had them on hand. When the dish was finished, I stirred in the juice from half a lemon into the cauliflower before serving. It was a hit! Even my picky 15 year old (who is NOT on Keto) thought it was pretty good. Will definitely make this again!

Easy and delicious. I don’t have a food processor, so I have to chop it by hand. If I give myself plenty of time, it’s not a bother and so worth the effort.

I cooked cauliflower rice with avocado oil instead of olive oil and served with fried scallops. My husband absolutely loved this dish! He said it was the best side dish for scallops I’ve ever made!

It was very good. We had lemon garlic scrimps on it and it was a good pair. I usually do jasmine or basmati rice plain, this rice needed a little help from the butter fairy.

Heck, I’m no vegetarian or vegan, but I made this cauliflower rice tonight for the first time (adding some sauteed garlic and onion) that was surprisingly very good. So good in fact, that I’ll probably use this as a replacement for future rice dishes. Made some grilled marinated (keto) Thai chicken satay (topped with a peanut butter, coconut milk, red curry and red chili sauce) and the “rice” worked perfectly with it (and a little freshly squeezed lime juice). I’m actually shocked at how good the “rice” was. Crazy good… To quote Simon Cowell, “I wasn’t expecting that.” 🙂
