Low-Carb Air Fryer Zucchini Fries

This recipe for marlin uses marlin steaks that have been cooked in a garlic butter sauce and then topped with tomato and basil. Greek olives and feta cheese go great with this fish.

Ingredients

  1. 2 medium zucchini, cut into 3×1/2-inch sticks
  2. 1 large egg, beaten
  3. ½ cup almond flour
  4. ½ cup grated Parmesan cheese
  5. 1 teaspoon Italian seasoning
  6. salt and freshly ground black pepper to taste
  7. olive oil cooking spray

Instructions

  1. Preheat air fryer to 400 degrees F (200 degrees C).
  2. Add egg to a shallow bowl. Combine almond flour, Parmesan cheese, Italian seasoning, salt, and pepper in a second bowl; mix to combine.
  3. Dredge zucchini first in egg, then in almond flour mixture, and lay out on a baking sheet. Spray zucchini generously with olive oil cooking spray. Spread out zucchini in a single layer in the air fryer basket. You might need to work in batches.
  4. Cook until crispy, about 10 minutes.
  5. If you are not doing a low-carb or keto diet, you can replace the almond flour with panko bread crumbs.
  6. You can use any other seasoning mix instead of Italian seasoning, e.g. Cajun seasoning, taco seasoning or ranch dressing.

I thought these were really good! The downside, they take quite a while to make – it’s certainly not a quick meal. Most air fryers aren’t going to be able to accommodate all fries at once. I had to do 3 batches, while keeping the rest warm in the oven. I barely had enough egg, so I suggest using 2 to coat the pieces. The breading held on wonderfully and the fries were nice and crispy. Just don’t let them sit long because they turn mushy and lose their crisp, which is what started happening to those that were being kept warm in the oven. I served these with hot sauce – excellent!
