Ingredients
- 1 head cauliflower, cut into florets
- 1 tablespoon water
- 1 lime, juiced and zested
- ½ cup chopped cilantro
- 2 tablespoons butter (Optional)
Instructions
- Grate cauliflower florets or pulse in a food processor until it resembles rice.
- Place grated cauliflower and water in a microwave-safe covered dish.
- Cook cauliflower in microwave on high until tender, about 7 minutes.
- Stir lime zest, lime juice, cilantro, and butter into cooked cauliflower until well blended.

This is very good on its own. But I also used it as a base for other dishes instead of rice. It’s very bright and tasty and since my husband has diabetes and needs to watch his carb intake it’s a great substitute.
I used pre-packaged riced cauliflower. It was very good.
This was delicious! In the past I had always used the frozen cauliflower rice but it makes such a difference when you use fresh cauliflower that you rice yourself. This recipe was so simple to make and made plenty of rice which I used for several meals. I love cilantro and lime flavors so this recipe was right up my alley. As someone who is a notoriously picky eater, I highly suggest this!

Great recipe – I cheated. I used frozen riced cauliflower, cooked as directed on package. I added chicken bouillon flavor and it turned out great!
Working on a diet with a lot less starches, this has become one of my favorite go-to’s. It has a bright, enjoyable flavor. I’ve used it with stir fry or as a side dish.
Even my two teens agreed this was a great substitute for rice on our burritos. I’m going to try to freeze it and hope that works, it’ll be great to have on hand for Mexican night (or even when we have Asian bowls).

I loved it but the kids not so much
I made this using the processor to “rice” the cauliiflower and that was easy peasy. This was pretty good when it was hot. Out of the fridge the next day, and it definitely had to be heated up. I did not care for it cold.
Easy to make, tasty and a great alternate to rice. I didn’t use the butter, found it wasn’t needed but did add a few other spices to zest it up a bit.
