Keto Cauliflower Hash Browns

This keto version of hash browns combines cauliflower, cheddar, and bacon.

Ingredients

  1. 3 cups grated cauliflower
  2. 1 cup shredded Cheddar cheese
  3. 1 large egg
  4. ¼ cup real bacon bits
  5. 1 tablespoon diced chives
  6. ½ teaspoon salt
  7. ⅛ teaspoon ground black pepper
  8. 1 pinch cayenne pepper (Optional)
  9. cooking spray

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Place grated cauliflower in a microwave-safe bowl. Cook on high for 2 minutes. Let cool for 5 minutes.
  3. Wring cauliflower in a clean dish towel, squeezing out as much moisture as possible. Transfer cauliflower to a large mixing bowl. Add Cheddar cheese, egg, bacon bits, chives, salt, pepper, and cayenne. Mix well.
  4. Spray a large baking sheet with cooking spray. Divide cauliflower mixture into 6 equal portions, making sure to leave space between each one. Flatten with your hands and shape into ovals.
  5. Bake in the preheated oven until browned, about 15 minutes. Turn broiler on low and broil until crispy, about 5 minutes. Let cool for 5 minutes to firm up.
  6. If desired, make your own bacon bits. Pan-fry 4 slices of bacon until crisp, then crumble them into small pieces.

Wasn’t positive what to expect but very tasty! Next time I will probably flatten more—I missed “shape into ovals” to mean small mounds so they were thicker than I wished they were but still very good!

A bag of cauliflower rice was 2 cups. So used 2 bags. So I upped everything else a little too. Used real bacon that I crumbled, and green onions because I didn’t have chives. Guessed a little at when to quit baking and broiling. Really good! Glad I found this. Little labor intensive when you are picking it out off the internet blindly but it is worth it.

Great recipe! Easy to do. I put chives and bacon bits in it, since I had extra. I would think you could put some sour cream on top for a loaded baked potato. I will be making more of these. Thank you!

This recipe is really tasty! The only change I made was I added fresh chopped cayenne peppers instead of the flakes and I used sharp cheddar instead of the mild.

Too salty! The bacon bits and cheese add enough sodium. If I were to make this again, I would omit the additional salt. I also found them rather dry. This is a recipe that has potential but needs some more work.

I grated the cauliflower myself so prep time was more like 30 m. and used cheese cloth for straining. Easy to put together, my husband & I enjoyed it with tilapia for dinner. Will definitely make again & share this recipe.

I didn’t use bacon and added more salt and peper. Recipe was 20g carbs and made 9 hash browns at 2.2g carbs each. It was so good and I will definitely make it again.

If you eliminate the bacon bits, cheese (for those of us who dont sit well with cheese), table salt…and replace the table salt with pink Himalayan salt you have a very healthy breakfast full of minerals

The trick is to not overcook in the oven. I burnt mine too much for my liking but if you really watch it they are great alternative to potato hash browns. Good recipe.

Turned out great tweaked the recipe added sautéd diced green peppers and red onions stuck with sea salt and black pepper also added crushed red peppers and topped with shredded cheese after was almost done let melt soooo yummy

These are great and fit into my diet so I love them . With all cauliflower recipes the ricing and squeezeing out the moisture can be a pain and messy but well worth it. I made the a couple weeks again and followed the recipe exactly they were good but lat night I added an extra egg and cooked them in the waffle iron. WOW took them to a new level. A few crumbled but once I got a technique going to get them out of the iron it worked perfectly. Anybody wanting to be adventurous should try this.

Soo good!! I had about 1/2 -3/4 cup extra cauliflower so I added 1 extra egg, I also added a few good shakes of garlic powder – they were a hit!
