Yield: 6 servings

Ingredients

  1. 1 small head cauliflower, broken into small florets
  2. 1 cup all-purpose flour
  3. 1 teaspoon paprika
  4. salt and ground black pepper to taste
  5. 2 cups almond milk, or as needed
  6. ½ cup bread crumbs, or as needed (Optional)
  7. 2 ounces vegan margarine (such as Earth Balance®)
  8. 1 (8 ounce) bottle hot pepper sauce (such as Frank’s RedHot®)

Instructions

  1. Preheat the oven to 450 degrees F (230 degrees C). Line a cookie sheet with parchment paper.
  2. Mix flour, paprika, salt, and pepper together. Add enough almond milk to create a slightly thick, soupy texture.
  3. Place bread crumbs in a shallow bowl. Dip cauliflower pieces one at a time into the batter, then roll in bread crumbs. Place on the prepared cookie sheet.
  4. Bake in the preheated oven until starting to brown, 15 to 20 minutes.
  5. While ‘wings’ are baking, melt margarine and whisk together with hot sauce.
  6. Reduce oven temperature to 425 degrees F (220 degrees C). Dip ‘wings’ into the sauce and place back on the cookie sheet; continue baking for 10 to 15 minutes. Serve immediately.
  7. Use any hot sauce you prefer.
  8. Gluten-free flour and bread crumbs also work in this recipe.

The cauliflower was just right after 15 min of baking, so I only gave it 5 more min with the hot sauce. I tried it 2 ways, one as written (but with shorter baking tim, the other adding the hot sauce in with the flour/milk coating. Very little difference in taste, much easier preparation. I didn’t use bread crumbs but made the batter much thicker. Easy, fast, healthy, perfect!

Recipe is great! I had never heard of this before. Instead of the butter and hot sauce, I used Buffalo wing sauce for some and a bourbon barbecue sauce for the others. Both flavors turned out really good.

Fabulous. Definitely make sure the florets don’t touch on the baking sheets to get them crispier.

Wouldn’t change a thing! I think the flour mixture really helps the flavor get into the cauliflower. Our new go to for a vegetarian menu.
