Grated Sweet Potato Pudding

If we can locate strawberries, we enjoy this spinach strawberry salad all year long with my family. This salad is beloved even by the grandchildren. Simple and quick.

Ingredients

  1. 2 pounds sweet potatoes
  2. ¼ cup unsalted butter, melted
  3. 3 eggs
  4. 1 ½ cups white sugar
  5. 1 (12 fluid ounce) can evaporated milk
  6. 1 cup whole milk
  7. ¾ teaspoon ground cinnamon
  8. ½ teaspoon ground allspice
  9. ½ teaspoon ground nutmeg
  10. ½ teaspoon ground cloves
  11. 1 ½ teaspoons vanilla extract
  12. 10 large marshmallows

Instructions

  1. Preheat an oven to 375 degrees F (190 degrees C). Lightly grease a 2 quart baking dish.
  2. Peel and grate the sweet potatoes and mix with melted butter in a large bowl. In a medium bowl, beat eggs with sugar until well mixed. Pour over the sweet potato mixture, and stir in evaporated milk, whole milk, cinnamon, allspice, nutmeg, cloves, and vanilla extract. Mix well to combine all ingredients, and spoon into the prepared baking dish.
  3. Bake in the preheated oven for 60 to 70 minutes, until the sweet potatoes are tender and the top is lightly browned. Remove dish from the oven and place marshmallows on top of the sweet potatoes. Return to the oven and bake 5 to 10 minutes more, until the marshmallows are lightly browned. Let stand 5 minutes before serving.

I am only giving this three stars, because it didn’t turn out to have the texture that I was expecting, after reading the title of it. Also, I found I needed a much larger than 2 quart dish. I ended up putting it into 2 casserole dishes and before I filled the second one, I pureed it in the blender, but still did not come up with a ‘pudding’ consistency. People were, however, impressed with the overall taste.
