Cheesy Zucchini Dish

The perfect marriage of smoked mozzarella, rich, tomato-y marinara, and crispy, creamy, fried eggplant. This meal qualifies as sublime.

Ingredients

  1. 12 small zucchinis
  2. 1 ½ cups all-purpose flour
  3. 1 tablespoon garlic powder
  4. salt and pepper to taste
  5. 1 cup milk
  6. 2 teaspoons garlic powder

  8. 16 ounces sour cream
  9. 3 cups shredded sharp Cheddar cheese
  10. ⅓ cup vegetable oil

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray one 9×13 inch baking dish with non-stick spray.
  2. Bring a pot of water to a boil; blanch zucchini, drain and cool.
  3. In a shallow bowl, mix together 1 1/2 cups flour, 1 tablespoon garlic powder and salt and pepper to taste. In a separate bowl, combine the milk, 2 teaspoons garlic, salt and pepper to taste.
  4. Cut ends off zucchini and then cut in thirds. Roll zucchini in flour mixture, then in milk and again in flour to cover completely. Set aside on parchment paper until all pieces are covered.
  5. Heat large frying pan over medium high heat, add oil and brown zucchini on all sides. Remove and arrange in a 9×13 inch baking dish. Spread sour cream over zucchini and top with cheese.
  6. Bake for 20 to 25 minutes or until cheese is beginning to brown. Remove from oven and let sit for 10 minutes and serve.

This was a little bland for my kids. I thought it was okay.

Good dish, but a touch on the bland side. maybe next time I will go with some sort of chili powder or hot sauce in the mix to just spice it up. This recipe makes a ton also, I might also 1/2 next time.

It was good, but we only did a third of the recipe and still had too much! Maybe it’s because I went light on the toppings. I enjoyed it, but hubby who made the dish had problems getting the batter to stick to the zucchinis when frying them. It was very tasty.

Very good, but again, very fattening. I used low fat sour cream, so that might help a little!
