Cauliflower Rice Stir-Fry

Something about chicken and paprika is just so delicious! A wonderful mushroom sauce is produced when this meal is cooked under cover, and it can be served with the chicken.

Ingredients

  1. 2 tablespoons sesame oil
  2. 1 teaspoon minced garlic
  3. 1 teaspoon grated fresh ginger
  4. 2 (12 ounce) packages frozen riced cauliflower medley
  5. 4 tablespoons soy sauce
  6. 2 eggs, lightly beaten

Instructions

  1. Heat sesame oil in a large nonstick skillet over medium heat. Add garlic and ginger and cook until fragrant, about 1 minute. Add riced cauliflower medley and cook, stirring frequently, until vegetables are tender-crisp, about 5 minutes. Stir in soy sauce and cook for 1 minute.
  2. Move cauliflower mixture to one side of the skillet and pour eggs into the other side. Cook and stir until eggs are scrambled, about 3 minutes. Mix eggs and cauliflower mixture together and cook until heated through, about 1 minute.

Can’t really go wrong with stir-fry. Added whatever other vegetables I had as well. Used fresh cauliflower. Made lots so was good for another meal.

GREETINGS My First time eating rice cauliflower I really enjoyed this recipes flavor profile! I used shallots green onion ginger garlic eggs chicken soy and hoisin sauce garlic pepper sesame oil…..This will be my go to…since cauliflower can be eaten and not worry abt the carbs as much as rice! And I love ❤️ rice! But this has transformed me!

I used a bag of riced cauliflower and a bag of frozen mixed veggies. After browning 1/2 onion , I steamed the cauliflower,& veggies then added 2 tsp of chicken flavored Better than Bouillon (not stock). Seasoned with garlic, pepper, salt. Also added a can of chicken breast. I know this is not stir fry, but its very tasty!

I think that next time I make it I would cook the eggs separately….other than that it was bomb! 🙂

Wonderful! I have tried a few things. We like it better with 4 tablespoons of Yoshida Sweet Teriyaki Gourmet Sauce instead of plain Soy sauce. Since I haven’t found a fried rice with veggies, I use a 12 ounce bag of riced cauliflour and a 12 oz bag of frozen peas and carrots. We also like a little more garlic than the recipe calls for.

IT would have been much better had I been able to add more veggies. The only veggies I had was carrotts and onions. I will make it again sometime when I can add more to it. It did not taste bad it just did not WOW me.

I have made this twice. I only had cauliflower rice 16 oz pkgs from Costco (plain rice, not two 12 oz pkg of medley) so I added a whole onion that I sauteed in the sesame oil first for about 4 minutes then added the garlic and ginger. I heated up the rice in the microwave to speed the process then added it to the already cooked onion/garlic/ginger and cooked for another 5 minutes. Otherwise followed the recipe. It was great.

I used Green Giant riced cauliflower with peas and carrots and I should have drained it because it was watery. Other than that, this was an easy and tasty recipe, I will make it again.

Very tasty! This makes 3 large portions, suitable for a main meal. I wasn’t sure which ‘cauliflower medley’ was intended, but I ended up buying Green Giant Riced Cauliflower Medley, which has carrots, peas and onions. Perfect! I ended up cooking the cauliflower in 2 batches, otherwise my large pan was too crowded and the veggies were just steaming, as opposed to frying. I did this over high heat. I topped it with fresh green onion. A healthy, low-carb alternative to fried rice that I’ll be making again!
