Ingredients
- 1 head cauliflower, broken into florets
- 1 cup almond flour
- 2 eggs
- ½ teaspoon cayenne pepper
- salt and ground black pepper to taste
- 2 tablespoons extra-virgin olive oil, or as needed
Instructions
- Bring water to boil in a saucepan. Add cauliflower; boil until tender, about 15 minutes. Strain cauliflower, transfer to a bowl, and mash with a fork.
- Stir almond flour, eggs, cayenne pepper, salt, and black pepper into cauliflower until well-combined; form into 1/4-cup sized patties.
- Heat 1 teaspoon olive oil in a skillet over medium heat. Fry patties in a single layer until golden brown, about 5 minutes per side. Repeat with remaining patties and olive oil.
- You can really play with this recipe. Try adding shredded cheese, shallots, roasted red pepper, etc.
- Substitute equal parts of coconut flour and tapioca flour for the almond flour, if desired.

This is something my Grandmother made for us all the time when I was little – so I love them! I did switch up the recipe because I’m a wimp with anything hot/spicy. I used regular bread crumbs, about a half cup of chopped celery & also cut up some of the celery leaves, parmesan cheese, garlic salt. My only problem was that it was hard to keep together. Next time I’m going to try it with almond flour to see the difference.
This recipe was easy to make and tasty. My husband and I both love it!
Easy recipe and I let them go golden crisp instead of 5 minutes per side. On the side I mixed chili sauce with some masala and I use it as dip sauce, so delicious. I can’t wait to make them again !!
I stopped at four stars because I could never get the patties to fry, too much water. I modified the recipe by cutting back on cayenne pepper and adding quarter cup of grated Parmesan Cheese. There was was still too much water, so I refrigerated it for a day and then spread the mixture on a baking sheet and baked it at 400 degrees for 30 minuted. The water was baked out and the mixture became a patty. Next time, I think I will use Italian Style Plank-o bread crumbs in place of the flours.
I rated three stars but I would try it again. Next time around I will use less flour, more salt. I didn’t have any trouble with them staying together but I did not pan fry them. Another reviewer suggested baking for 10 minutes and then air frying which I did and it worked well. They just came out a bit heavy.
I made these using leftover cauliflower-broccoli-carrot mix. It was tasty, but a little on the dry side. Including some cheese might have helped. A very good stand-in for the starchy something that I miss since cutting back on carbs. I will definitely make it again.
These were easy to make and a nice low carb addition to a mostly plant based meal. The recipe seemed a little bland for my taste, so I added 1/4 cup of minced fresh onion, 1 pressed garlic clove and an 1/8 teaspoon herbs de Provence. The cayenne packed a nice little kick, not overwhelming. Mine crumbled pretty easily so I would consider adding cheese next time to help bind them.
Did not care for this. Would not hold together and very bland. will not bother with making again.
Will make again! Decided to drop ‘dough’ into the hot grease by the teaspoonful – came out crispier and more flavor. Did add some garlic/herb seasoning (about a teaspoon) and some parsley flakes (just sprinkled – not measured). Even my family like them – and they aren’t Ketoing it.
Great recipe. My kids loved it and had no idea it was made of vegetables. I used whole wheat flour instead of almond flour and it was fine. It didn’t fall apart. I added some spices such as onion powder, garlic powder, paprika, and hot red chilli flakes.
These turned out well but with some changes.. I mixed in cheese and spices, then baked at 375 for 10 minutes, then popped them in the air fryer.
I have made this twice and both times it’s turned out delicious. I add chives and cream cheese. They stay together when frying but one needs to handle them carefully. I’ve found they’re great for making a week long meal prep.
Love having this recipe as an option to use a head of cauliflower I have forgotten I have in the fridge! EASY recipe. I made it as is (when I make a recipe for the 1st time, I make it exactly as shown in respect for the person who created it)…yummy. What I would like to see is suggestions for their use – how do folks use these? Bet they are great for sweet *or* savory applications…after munching on a couple of them during cooking? The possibilities seem endless. So nice to have an “out of the old box” recipe for cauli – I love cauli!
This concoction is impossible to form into ‘patties’. I gave up and fried up the whole mess as a scrambed egg sort of thingy
I tweeked it a bit! I used some chopped shallots with bacon and feta. It was fabulous!
I used a bag of raw riced cauliflower so they didn’t stick together as well as they might if I had followed the recipe, but the eggs did the trick to keep the patties stuck together and they ended up coming out really good.
Great recipe . Added onion and cheddar cheese. Made them as hash browns for breakfast.

I used regular flour and cheddar cheese to hold it all together. I held together. It wasn’t good enough to make again.
I added cheddar cheese and Romano cheese along with garlic powder and Herbs de Provence. I cooked it on a little higher than medium heat for 7 minutes per side. They held together and turned out crispy and delicious
Our family loved this and followed the extract recipe. Spooned batter into the skillet and it formed pancakes that were easy to flip. Even my picky 10 year old asked for more.
