Broiled Zucchini

Green salsa with roasted peppers made exactly how grandma used to make it, except the molcajete. Making it in a food processor is simply simpler. Depending on how many seeds and membranes you remove from the pepper pods, the heat of your salsa can be adjusted.

Ingredients

  1. 2 medium zucchini
  2. nonstick cooking spray
  3. salt to taste
  4. 1 teaspoon garlic powder, or to taste
  5. 1 teaspoon onion powder, or to taste

Instructions

  1. Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler.
  2. Slice zucchini into 3 lengthwise pieces. Spray each slice with cooking spray.
  3. Season with salt, garlic powder, and onion powder and set on a baking sheet.
  4. Broil in the preheated oven until lightly browned, about 5 minutes. Turn zucchini and broil on the other side until lightly browned, an additional 5 minutes.

A simple way to make zucchini. I enjoyed the seasonings and the cook time was perfect. I did cut my zucchini in 4 quarters lengthwise, instead of 3 slices as it was just easier. While I prefer my zucchini grilled, I would probably make this again when the weather isn’t ideal for grilling.

Really quick and easy recipe to throw together for a tasty and healthy side dish. Like another reviewer my zucchini wasn’t browning after the 10 minutes so I kept it in 3 additional minutes. I found that the texture was a bit too soft for me, so next time I would either preheat my broiler longer or cut thicker slices of zucchini. Definitely will be making this again!

While I prefer to grill zucchini, this method works as well, but it’s more difficult to control the doneness with the broiler. Seasonings were very tasty though. I did brush them with EVOO instead of using the cooking spray, as I don’t like the taste of it.

Super simple and tasty! Mine took quite a bit longer to cook than the recipe calls for, but all broilers cook differently. Seasonings and flavor were great, and I’ll be making this simple side dish again! Thanks for sharing!
