My mother-in-law gave me this recipe, and it is delicious! Anything extra that is added just enhances the overall quality. I advise everyone to at least try it! You could even include some bacon bits. accompanied by fried deer meat. If you like, you can substitute vegetable or olive oil for the bacon grease.

Ingredients

  1. 1 cup milk
  2. 1 egg
  3. 1 cup cornmeal, or as needed
  4. 2 squash, sliced
  5. 2 red potatoes, cubed
  6. 2 green tomatoes, cubed
  7. 3 pods fresh okra, sliced into rings, or more to taste
  8. ½ onion, diced
  9. ½ green bell pepper, diced
  10. 2 tablespoons bacon grease, or as needed
  11. salt and ground black pepper to taste

Instructions

  1. Whisk milk and egg together in a large bowl. Pour cornmeal into another large bowl.
  2. Dip squash, potatoes, tomatoes, okra, onion, and green bell pepper into milk mixture; press vegetables into cornmeal to coat.
  3. Heat bacon grease in a large skillet over medium-high heat. Cook and stir vegetable mixture in hot grease until golden and tender, 15 to 25 minutes. Season with salt and black pepper.

When I saw the recipe title I knew I had to be the first to rate and photo this recipe. While I am not originally from Arkansas, this is where I have spent the past 20 years. With the exception of the potatoes and onions, all other veggies came from my homegrown Arkansas garden. I served this with Arkansas caught trout but it would have gone nicely with any protein. The only thing that didn’t work for me is that it took a lot more than 2 tablespoons of bacon grease to fry all of the ingredients in a skillet. I keep bacon grease on hand so it was not a problem for me but if you don’t you might want to plan accordingly. The bacon grease gives the entire dish a nice smokiness and each ingredient absorbs it in its own special way as not to overpower. Not the healthiest side dish but it was a nice treat and one I will make often in the summer when my garden is in full bloom. I’m thinking fresh green beans and banana peppers in the mix would work great too!
