Air Fryer Zucchini Fritters

Without the artificial ingredients present in store-bought bars, I wanted to produce oatmeal bars that could be eaten on-the-go. This recipe makes chewy oatmeal bars as a base, but you may adapt it to your personal preferences by using dried fruit, chocolate chips, or chopped nuts for additional flavor and texture. These oat-packed snacks are ideal for a quick breakfast, snack, or addition to a lunchbox.

Ingredients

  1. 2 medium green zucchini
  2. ½ teaspoon fine sea salt
  3. ½ cup grated Parmigiano-Reggiano cheese
  4. 1 large egg, lightly beaten
  5. 3 tablespoons fine bread crumbs
  6. ½ teaspoon coarsely ground black pepper, or more to taste
  7. ¼ teaspoon garlic powder
  8. 1 medium shallot, grated
  9. 1 medium fresh jalapeño pepper, grated
  10. ½ cup fine bread crumbs, or as needed
  11. 1 tablespoon olive oil, or as needed

Instructions

  1. Grate zucchini using the large teeth of a grater. Toss zucchini and salt together in a large colander and place into the sink to drain for 10 minutes.
  2. Transfer zucchini to the middle of a piece of cheesecloth; wrap cheesecloth around zucchini and squeeze to drain as much moisture as possible.
  3. Mix Parmigiano-Reggiano cheese, egg, 3 tablespoons bread crumbs, black pepper, and garlic powder together in a large bowl. Stir in zucchini, shallot, and jalapeño until combined.
  4. Preheat the air fryer to 400 degrees F (200 degrees C). Place 1/2 cup bread crumbs into a shallow plate or pie dish.
  5. Divide fritter batter into seven equal portions. With oiled hands, gently roll each portion into a ball; the batter will be very wet. Gently roll each ball in bread crumbs to cover all sides, then tap gently so excess bread crumbs fall off.
  6. Air fry fritters in two batches until browned, about 15 minutes per batch.

Excellent recipe! I like spicy, so I didn’t seed the jalapeno, and I love how they turned out. When dividing the mixture up into 7 patties, I found a 1/4 cup measuring cup worked just right. Time in the air fryer was perfect. Thanks for the recipe!
