This pork chop hash brown casserole is for you if comfort food is your thing. It will gratify because it is rich and creamy.

Ingredients

  1. 1 pound dry black beans
  2. cold water, or as needed
  3. ½ cup lentils
  4. 2 tablespoons dry roux mix
  5. 1 green bell pepper, diced
  6. 1 (10.75 ounce) can condensed tomato soup
  7. 1 cup pumpkin puree
  8. 1 (1.25 ounce) package chili seasoning mix
  9. 2 tablespoons white sugar
  10. 1 tablespoon ground cinnamon
  11. 1 teaspoon nutmeg
  12. 1 teaspoon ground cloves
  13. ½ teaspoon onion powder

Instructions

  1. Place black beans into a large bowl and cover with several inches cool water; let soak 8 hours to overnight.
  2. Drain and rinse beans thoroughly; place in a large pot. Cover with 1 inch of water; add lentils. Bring mixture to a boil; stir in roux mix until fully incorporated. Cover, reduce heat, and simmer until beans are tender, about 30 minutes.
  3. Place diced bell pepper in a microwave-safe bowl; cook in the microwave until slightly tender, 30 to 60 seconds. Stir bell pepper, tomato soup, pumpkin puree, chili seasoning mix, sugar, cinnamon, nutmeg, cloves, and onion powder into bean mixture. Cover and simmer until flavors have blended, about 15 minutes, stirring occasionally.

Yum yum yum. Served over Farfalle pasta. Didn’t have the green pepper. Still very good. Didn’t soak beans overnight just boiled them for 1/2 hour first. Used approximately 2 cups pumpkin purée from the garden harvest this fall. Made my own roux and Chili seasoning using all recipes recipes. Great veggie meal. Love the spices!

It was delicious! Perfect recipe for fall. I did leave out the cloves, as others had suggested

I suggest leaving out the Cloves or reduce to 1/4 tsp.
