This recipe comes from my mother. have excellent taste. Because it is so simple to create, youngsters may also enjoy cooking. Any party should serve it as an appetizer.

Ingredients

  1. 2 tablespoons butter
  2. 1 onion, chopped
  3. 1 cup couscous
  4. 8 cups water
  5. 2 zucchini, chopped
  6. 1 potato, chopped
  7. 20 green beans, chopped
  8. 2 carrots, chopped
  9. 2 tablespoons tomato puree
  10. ½ teaspoon ground coriander
  11. ½ teaspoon red chile powder
  12. ½ teaspoon ground cumin
  13. ¼ teaspoon salt
  14. ½ cup milk

Instructions

  1. Melt butter in a pot over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Mix in couscous; cook and stir until browned, about 5 minutes.
  2. Stir in water, zucchini, potato, green beans, carrots, tomato puree, coriander, chile powder, cumin, and salt; bring to a boil. Simmer until tender, about 20 minutes. Stir in milk.

added chicken stock instead of water. maybe increased the spice, I added a little too much pepper for some. very good.

This was pretty good overall. I made a few changes based on the previous reviews: I only used 1/2 cup of Israeli couscous instead of 1 cup couscous to keep it more like a soup; I added in some paprika with the other spices; and I left out the milk at the end. One more change I would make in the future is to use a full can of tomato paste instead of a few tablespoons of tomato puree (it could use that little bit of extra oomph from the tomato paste). I would make it again, but with these changes.

A nice idea but for me needed some help. Way too much couscous for me.. it soaked up all the broth and came out as thick as oatmeal. Maybe that is how this “soup” is supposed to be.. just be aware if you make this. Seasoning – need more. I added some vegetable soup base to the leftovers and that helped. Would suggest making this with a veggie or chicken stock instead of water… and increasing other seasonings

I only say that it is OK because I’m not sure how it is supposed to be. I found it a bit too thick for my taste.
