This is one of my husband’s faves, which is fortunate because I also adore it and it’s incredibly simple to make! This dish is ideal since there are so many various things you can do with it. I love recipes that are simple to modify. You must give it a try if you want to adore it. Lots of filling is what I find to be the greatest about this recipe, so feel free to double it if you think there isn’t enough.

Ingredients

  1. 10 ounces ground turkey
  2. 3 turkey Italian sausages, casings removed
  3. 1 cup chopped green bell pepper
  4. ⅔ cup chopped onion
  5. 4 stalks celery, thinly sliced
  6. 2 (28 ounce) cans stewed tomatoes
  7. 6 zucchini, cut into cubes
  8. 4 (10.75 ounce) cans low-sodium chicken broth
  9. 1 tablespoon Italian seasoning
  10. ½ teaspoon sea salt
  11. ½ teaspoon dried tarragon
  12. ½ teaspoon garlic powder
  13. ground black pepper to taste
  14. ¼ cup grated Parmesan cheese, or to taste

Instructions

  1. Cook and stir ground turkey, sausage, bell pepper, onion, and celery in a large pot over medium-high heat until meat is no longer pink and vegetables are tender, 10 to 12 minutes.
  2. Stir tomatoes, zucchini, chicken broth, Italian seasoning, sea salt, tarragon, garlic powder, and black pepper into turkey mixture; bring to a boil, reduce heat to low, and simmer until flavors combine, about 1 hour. Ladle soup into bowls and garnish with Parmesan cheese.

I omitted the ground turkey so halved the liquid (tomatoes and chicken stock) and added wheat gnocchi which absorbed some of the liquid to give it more of a stew like consistency, which I was aiming for. I substituted fennel seed for the tarragon. It is amazing, will definitely make again! Next time I might use real garlic, if you have it, why not use it!

I added a handful of fresh spinach, replaced the Italian sausage with sliced smoked turkey sausage and then topped it off with the Parmesan mixed into an egg, adding this to the pot of soup. Delicious!

Flavorful, hearty soup. I used about 1/2 the amount crushed tomato and chicken broth to keep the soup thick.
