On a hot day, quick, delicious, and refreshing. You can use frozen strawberries or peaches in place of fresh ones if you don’t have any on hand.

Ingredients

  1. 8 cups chicken stock
  2. 4 potatoes, cut into 1-inch cubes
  3. 3 zucchini, cut into 1-inch cubes
  4. 2 small onions, cut into 1-inch cubes
  5. 2 carrots, cut into 1-inch chunks
  6. ¾ cup chopped fresh dill
  7. 1 ½ tablespoons chopped fresh basil
  8. 5 cloves garlic, minced, or more to taste
  9. 1 teaspoon chopped fresh thyme
  10. 1 teaspoon chopped fresh rosemary
  11. 1 (8 ounce) package shredded Cheddar cheese
  12. salt and ground black pepper to taste

Instructions

  1. Combine chicken stock, potatoes, zucchini, onions, carrots, dill, basil, garlic, thyme, and rosemary in a large pot. Bring to a boil, then reduce the heat to medium-low and simmer until vegetables are completely tender, about 40 minutes.
  2. Turn the heat off, but leave the pot on the stove. Stir in Cheddar until melted, then season with salt and pepper.

This was very good. I didn’t have potatoes so left those out but I had lots of asparagus and added those. Didn’t have fresh dill so used 3 TBLS dried. Still good. Liked the dill flavor a lot. Used half chicken and half vegetable broth because that’s what I had. I added too much salt. My bad! Other than that mistake it was very good. Not sure I’d add the cheddar cheese next time. Didn’t seem to add much to the overall goodness of the soup other than extra calories and fat. Thanks for the recipe!!

This was a very nice soup. Didn’t have access to the fresh herbs so I used dried.. still very good. I also pureed this and tried it cold.. tasty that way too

I LOVE THIS RECIPE IT TASTES SO GOOD BECAUSE AFTER I ADDED THE BROTH I WAITED 5 MINUTES AND ADDED A PINT OF HEAVY WHIPPING CREAM.I PLANNED TO MAKE ANOTHER RECIPE FOR ZUCCHINI SOUP THAT HAD HEAVY WHIPPING CREAM BUT COULDN’T FIND IT ON MY COMPUTER SO I COMBINED THE 2 RECIPES.
