Nye’s Polonaise Room Cabbage Rolls

Ingredients

  1. 1 to 2 heads white cabbage, cored
  2. 1 gallon water, or enough to cover
  3. 2 teaspoons salt
  4. 1/4 cup white rice
  5. 2 tablespoons finely diced green bell pepper
  6. 2 tablespoons finely diced onion
  7. 3/4 pounds ground beef
  8. 3/4 pounds ground pork
  9. 1/2 pound mild pork sausage
  10. 1/2 pounds cooked smoked bacon, finely diced
  11. 2 tablespoons minced garlic
  12. 6 ounces tomato ketchup
  13. 1 teaspoon freshly ground black pepper
  14. 2 teaspoons fine salt
  15. 4 ounces grated Parmesan
  16. 2 eggs

Instructions

  1. Preheat oven to 300 degrees F.
  2. Place the cabbage in a stockpot and cover with water. Add salt, bring to a boil, and reduce to a simmer. Cook the cabbage until tender, about 1 hour. When the cabbage is done remove from the pot and cool in an ice water bath. Drain.
  3. Gently separate the leaves from the head of the cabbage, trying to keep them whole. Keep the inner white leaves for the cabbage rolls themselves and reserve the big outer green leaves to line the bottom of the baking dish.
  4. Mix all of the remaining ingredients together. Line the bottom of a glass 13 by 9 baking dish with some large green leaves.
  5. Place 1 white leaf on a cutting board with the stem towards you. Place 4 ounces of meat filling on top of the leaf and fold up stem end first. Fold the sides and the top of the leaf over to form a roll. Place the roll, seam side down, in the baking dish. Continue filling, rolling, and placing the rolls side by side until all the meat filling is used. If you have any leftover cabbage leaves place them on top of your rolls to protect them during cooking.
  6. Add 1 cup of water to the pan and cover with aluminum foil. Bake for 1 1/2 hours.

This recipe was GREAT! I took the other reviewer’s suggestion and added chicken stock before putting it in the oven. I also served it with spaghetti sauce (newman’s own sockarooni) and it really gave it an extra “kick” of spices. Absolutely delicious, my husband and I both loved it and I will be making this again.

I live in Mpls, not far from Nye’s, and frequent the joint often. You can never do @ home what they do in a great restaurant, but this is as close as you can get to the real deal. Eating @ Nye’s isn’t just about the food, it’s about the experience. My advice to the previous reviewer, use chicken stock instead of water…will add a bit more flavor to the cabbage. If you’ve never been to the twins, you need to get here fast because the food is better than ever, and there are so many options. Thanks Rachael, for finally visiting the beautiful twins…you hit the right spots!!!

I liked the flavor of the meat but the sauce lacked something. Need to try chicken broth instead of paper when cooking.

The sausage-meat mixture would make a great breakfast patty.
