Vegan Sour Cream

The creamy topping cools off spicy meals and adds a delicious balance to the finished dish. This is a great little alternative to using sour cream which contains a lot of saturated fat, but doesn’t compromise the classic rich texture.

Ingredients

  1. 1 cup raw cashews, soaked in cold water overnight, drained
  2. 1 tablespoon apple cider vinegar
  3. 1/2 lemon
  4. Salt
  5. Water, to blend

Instructions

  1. Place the soaked cashews in a blender jar with the apple cider vinegar, juice of 1/2 of a lemon, pinch of salt and enough water to cover the cashews. Blend on high until the mixture is creamy. Serve with Smoky Veggie Chili. [NOTE: allow 8-12 hours for cashews to soak overnight.]

First attempt was a little wonky. Grainy cashew texture and not a very white-ish color when blending was done.

Tasted pretty darn good though.

Going to try this again to see if the texture and color improves.
