Vegan Peach Cobbler

When using ripe, succulent fruits, this cobbler bakes for just 20 to 25 minutes. If your fruit is not perfectly ripe, I suggest covering the cobbler and baking it until the fruit is easily pierced with a knife, 10 to 15 minutes, then uncover and bake until the topping is beginning to brown around the edges.

Ingredients

  1. 7 large ripe peaches, pitted and sliced into 1/3-inch pieces (about 2 3/4 pounds)
  2. 2 tablespoons pure maple syrup
  3. 4 teaspoons arrowroot powder
  4. 2 teaspoons pure vanilla extract
  5. 1/2 teaspoon ground cinnamon
  6. 1/4 cup unsweetened almond milk or soy milk
  7. 1 teaspoon fresh lemon juice
  8. 2 1/2 cups whole spelt flour
  9. 1 1/2 teaspoons baking powder
  10. 1 teaspoon cinnamon
  11. 3/4 teaspoon baking soda
  12. 3/4 cup coconut sugar
  13. 1/4 teaspoon sea salt
  14. 1/4 cup extra-virgin coconut oil, melted
  15. 1 tablespoon pure maple syrup

Instructions

  1. For the filling: Preheat the oven to 350 degrees F. Add the peaches, maple syrup, arrowroot, vanilla and cinnamon to a large bowl, and mix thoroughly to combine. Transfer the fruit mixture to an 8-by-11-inch baking dish, and spread out in an even layer. 
  2. For the topping: Combine the almond milk and lemon juice in a small bowl, and set aside for 5 minutes to “clabber” (curdle). Sift the flour, baking powder, cinnamon and baking soda into a medium bowl; add the coconut sugar and salt, and whisk to combine. Drizzle the coconut oil into the flour mixture, and use your hands to work the oil in until all the flour is moistened. Add the clabbered almond milk and the maple syrup, and stir until just incorporated. 
  3. Crumble the topping over the filling, and bake until the fruit is bubbling and the topping is browning around the edges, 20 to 25 minutes. Remove the cobbler from the oven, and set aside for 10 minutes before serving.

Clearly tastes like a “healthy” incarnation of a classic dessert.  This one was dry, crumbly, and you could clearly taste the lack of fat/sugar as well as the whole grain component of the flour.  If I’m going to have a peach cobbler, I think in the future I’d prefer to make one that will please omnivores and traditional baking fans as well as vegans.

Very easy and delicious! Not what I call peach cobbler but more like a peach crumble. Still very good!
