Vegan Parmesan Cheese

This cashew-based recipe mimics Parmesan’s signature savory, salty and cheesy flavor with just five ingredients. Much like cheese you buy in a shaker, it’s powdery and ready to be dusted liberally over a plate of pasta.

Ingredients

  1. 1/2 cup raw cashews
  2. 1/4 cup pine nuts
  3. 1/4 cup nutritional yeast flakes
  4. 1 teaspoon kosher salt
  5. 1/4 teaspoon garlic powder

Instructions

  1. Combine the cashews, pine nuts, nutritional yeast, salt and garlic powder to a food processor and pulse until the mixture is granular like sand. Transfer to an airtight container and store in the refrigerator for up to 1 month.
