Zucchini Roll-Ups

Ingredients

  1. 4 medium zucchini, sliced lengthwise as thinly as possible (about 5 slices per zucchini)
  2. Olive oil, for brushing
  3. Kosher salt and freshly ground black pepper
  4. About 3/4 cup herbed cream cheese, such as Rondele or Alouette
  5. 20 fresh basil leaves, plus extra for garnish

Instructions

  1. Preheat a grill or grill pan to medium heat.
  2. Brush both sides of the zucchini slices with olive oil and place them on the grill. Sprinkle with salt and pepper. Grill, turning occasionally, until very soft but not falling apart, 8 to 10 minutes. Remove the slices to paper towels to absorb the excess moisture. Let them cool completely.
  3. Spread about 2 teaspoons of the herbed cheese onto each of the zucchini slices. Place a basil leaf on top. Starting at one end, roll each zucchini slice up until it’s a nice neat roll.
  4. Serve the roll-ups on a platter garnished with small basil leaves. These can be assembled and chilled up to 3 hours before serving.

used a mandoline on setting 2 (of3) – too thin?? evoo/salt/pepper/garlic powder prior to grilling. used garlic herb alouette. Overall, seems silly, but too much flavor? Maybe better if mandoline was not used? – or try setting 3?? less pre-seasoning as the spread already had enough flavor?? will try again.

I was intrigued by the recipe as my husband is on a very special diet.  I made a few changes and he really liked it.  After grilling zucchini, I added shaved parmesan cheese, let it cool a bit,  then added chive and onion cream cheese, then thinly sliced applewood smoked ham from deli .  It was DELISH. Thanks Ree for the base recipe !

Delicious! I mixed up my own herb cream cheese with fresh basil, parsley and a little bit of sage. So good! My husband doesn’t even like zucchini and he loved them!
