Zucchini Muffins

Ingredients

  1. 1 1/2 cups all-purpose flour
  2. 1/2 cup whole-wheat flour
  3. 1 teaspoon baking powder
  4. 1/2 teaspoon baking soda
  5. 1/2 teaspoon ground cinnamon
  6. 1/4 teaspoon freshly grated nutmeg
  7. 1/4 teaspoon fine salt
  8. 1 stick (8 tablespoons) unsalted butter, melted
  9. 1 cup sugar
  10. 1 cup Greek yogurt
  11. 3 large eggs
  12. 1 teaspoon pure vanilla extract
  13. 1 medium zucchini, grated on the large holes of a box grater (about 1 cup)
  14. 1/2 cup golden raisins

Instructions

  1. Preheat the oven to 400 degrees F. Line 18 muffin cups with paper liners.
  2. Whisk together the all-purpose and whole-wheat flours with the baking powder, baking soda, cinnamon, nutmeg and salt in a large bowl. Beat the butter, sugar, yogurt, eggs and vanilla together in another large bowl using an electric mixer on medium speed until fluffy. Reduce the speed to low and beat in the flour mixture until combined. Stir in the zucchini and raisins. Divide the batter evenly among the prepared cups.
  3. Bake until a toothpick inserted in the center of the muffins comes out clean, 15 to 18 minutes. Cool the muffins in the pans on a wire rack for 10 minutes; remove from the pans and cool completely on the rack.

I mean for as much sugar is in these they just aren’t that great to me. I always like to try new zucchini muffins to try. I even added a couple Chocolate chips to the top and they were pretty blah. Oh well onto the next!

Very good recipe! I love the fact that it has Greek yogurt in it, giving it a little more protein. I exchanged the raisins with orange flavored dried cranberries (because I had some in the pantry) and added a little orange zest.

The secret ingredient to making these so yummy is the Greek yogurt! Everyone who has had one of these muffins LOVEA them! I think I’ve made over 100 (this is not an exaggeration!) during Quarantine. Also, you can freeze them and then pop them in the oven when you’re ready to eat! Love these!
