This popular and delicious Yorkshire pudding dish is a great addition to the holiday spread. The time needs to be ideal if you want to make this. I advise making the mixture the previous evening so it may be ready while the roast beef cooks.

Ingredients

  1. 1 ½ cups all-purpose flour
  2. ¾ teaspoon salt
  3. ¾ cup milk, room temperature
  4. 3 large eggs, room temperature
  5. ¾ cup water
  6. ½ cup beef drippings

Instructions

  1. Mix together flour and salt in a large bowl; form a well in the center. Add milk and whisk until combined. Beat in eggs until incorporated. Add water; beat until mixture is light and frothy. Cover and set aside at room temperature for 1 hour (or, if it’s the day before, store covered in the refrigerator for 8 hours to overnight).
  2. Preheat the oven to 400 degrees F (205 degrees C).
  3. Pour beef drippings into a 9×12-inch baking dish and place in the preheated oven until drippings sizzle. Pour batter over drippings and bake until the sides have risen and turned golden brown, about 30 minutes. Cut into 8 portions and serve immediately.
  4. If batter has been refrigerated, allow it to come to room temperature before using.

I don’t know why anyone would give this 1 star! My husband is Irish. I’ve learned how to make this from the best. And, this recipe is so easy with the greatest results I have ever had. I didn’t use a machine. Just a bowl and fork for whisking. I did use a large(6) muffin pan. Amazing!

With not enough drippings I added 1 teaspoon of butter in each cupcake hole. Divided the 1/4 cup of drippings within all 12 cups. Put in oven to a sizzling noise. Then added batter. 20 minutes 400 degrees. Came out good!

I can’t comment on the authenticity, but this reminded me very much of the Yorkshire Pudding my mom cooked back in the 60’s. It rose beautifully, toasted up nicely, and finished with a great texture throughout. Very much like a good steakhouse popover. The use of beef drippings in the pan delivered flavor throughout the pudding. I baked it while the prime rib was resting, so oven space wasn’t a problem. This was a terrific side, a great alternative to ordinary breads, and truly delicious.

The drippings didn’t sizzle on their own in the oven even after having it in there for over 20 minutes, but they did sizzle when I poured the batter in (and my worry that I was doing so prematurely was unfounded!). It turned out perfectly and was a huge hit with our prime rib roast on Christmas!

This recipe is great and so far every time I’ve made it, it’s been so delicious! I am more careful about preparing it WAY ahead of time so it’s room temperature before going into oven. I also make it in cupcake tin and add about 2t to 1T hot oil/juice and then heat in oven until smoky hot, then add 1/2 cup batter to each. It makes 8 individuals ones.

heat pan with oil for 15 mins prior to adding batter. do not open oven. I took these ones out of the oven at 8 mins after cooking for 350 and they were slightly overdone.

I didn’t have enough drippings from my roast, so I substituted 1 tsp of butter per muffin slot in my muffin tin with great results! The recipe made over a dozen small puddings, and there was not a single one left after supper!
