Winter Green Salad

Both of my children, who are trained cooks, adore the flavor of fennel. When they come to visit, they insisted that I make my fennel seed and orange peel bread. Although it is not required, a bread machine will make the kneading easier. Since it is large enough for two loaves and won’t fit in my small bread maker, I have never mixed this recipe in the bread maker. Anyhow, being touched by a hand is nicer. For an elegant touch, the loaves can also be braided.

Ingredients

  1. 4 collard leaves, trimmed and finely chopped
  2. ⅓ bunch kale, trimmed and chopped
  3. 1 head romaine lettuce, chopped
  4. ¼ small head red cabbage, chopped
  5. 1 Bosc pear, cubed
  6. ½ Bermuda onion, finely diced
  7. ½ orange bell pepper, diced
  8. ½ Florida avocado – peeled, pitted, and diced
  9. ½ carrot, grated
  10. 5 cherry tomatoes, halved
  11. 7 walnut halves, crushed
  12. 2 tablespoons raisins, or to taste
  13. 6 tablespoons olive oil
  14. 3 tablespoons balsamic vinegar
  15. 1 tablespoon wildflower honey
  16. 1 tablespoon oregano, crushed
  17. 1 ½ teaspoons chili powder
  18. 1 teaspoon Dijon mustard
  19. 1 clove garlic, minced
  20. ½ teaspoon salt
  21. ¼ teaspoon crushed black peppercorns

Instructions

  1. Mix collard greens, kale, romaine, cabbage, pear, onion, orange bell pepper, avocado, carrot, tomatoes, walnuts, and raisins together in a large bowl.
  2. Combine olive oil, vinegar, honey, oregano, chili powder, Dijon mustard, garlic, salt, and black pepper in a glass jar with a lid. Cover the jar with a lid and shake vigorously until dressing is well mixed. Pour dressing over salad; toss to coat.

A keeper with some tweaks for personal taste. I would add more honey to the dressing next time to satisfy my sweet tooth! Versitale with different greens and an overall nice salad for the colder days of the year.

A very “sturdy” salad comprised of much fiber. Made exactly as written except substituted home grown green chard for kale. There is a slightly bitter taste, probably from the collard greens.

This was a tasty salad but there were so many elements you couldn’t get them all in one bite. As a result, as you eat, you’re asking yourself “wait, was that raisins or was that avocado”. As Posen says on Project Runway “learn to edit yourself.” I think this salad would benefit from a little editing. The only thing I did different was not use collard leaves, and they were not missed. The dressing was good. At first I only used 1 tsp. chilli powder because I was worried it would be too spicy, but after tasting it I ended up using the whole 1-1/2 tsp.

I made this for Dinner Club, last night, 11/17/19. Received lots of compliments. The dressing was quite good, and sturdy enough to stand up to all these ingredients. Everyone loved the little bit of heat that the chili powder gave. Very colorful, and just a note: Sizing up for 8 servings gave me more than enough salad for 12, even without the collards, which I did not have.

The salad dressing for this salad is so good! It’s got depth and warmth and is what make the salad unique. I will use the dressing with other salads as well. All said regarding the dressing the mix of greens is great too. Very hearty and very yummy! Will be making again.

This was good, but for all the time and ingredients that went into it, I’d expect this salad to wow me, and it didn’t. I’ve made other salads that were simpler and more flavorful and interesting, so for me this isn’t a keeper.

This salad is very good, but I would say it takes more like an hour to prep it – there are so many ingredients! I used the Collard greens, but I’m not sure I could taste their addition. Since I was making it for a large party, I increased the Kale, and doubled most everything else except the onion and cabbage. I also didn’t double the oil, but I did double the other dressing ingredients. Not sure this is an outstanding salad, but it was good, and the leftovers were good the next day, even after sitting in the dressing since it doesn’t wilt. I happened to taste it with a candied walnut (someone else’s salad mixed with mine), and it was really good! Not sure I would make this again, but for a kale salad, it was good.

This was a masterpiece salad for me. I followed the recipe ingredients (measurements not exact – what is 5/8 of a head of cabbage?) using half a small head. The colors and flavors were superb and I definitely plan to do this again! Family loved it! It really is a meal all by itself.

Well: no changes Canned pears are here. Preferences with CABBAGE SALAD Easy and quick : l/4 (quarter) two (2) centimeters cut green regular cabbage, l/2 (half) cap full of apple cider vinegar, l/4 (quarter) cup of regular sugar, and Kraft mayonnaise to moisten well. Fold pear cubes with half a pear for topping followed by two flowered cherries.

Pretty good. I think I’ll come back for more. Just that.. this salad has lots of ingredients. I personally think the raisins are a MUST. It adds so much flavour to the salad. I like the nuts too. Overall, it is a great recipe!
