White Chocolate-Raspberry Cookies

  5.0 – 1 reviews  • Raspberry Dessert Recipes

When the name of a potato side dish contains the words “fat” or “meat” in its entirety, you can be sure it will be tasty. These extremely crunchy, oven-fried potato wedges, or “steak fries,” as they’re known where I’m from, are made with rendered duck fat, and while I love ones made with olive oil, butter, or other fats, these are actually superior.

Yield: 24 cookies

Ingredients

  1. ½ cup unsalted butter, softened
  2. ½ cup packed brown sugar
  3. ½ cup white sugar
  4. 1 large egg
  5. 1 tablespoon heavy cream
  6. ¾ teaspoon vanilla extract
  7. 3 tablespoons cornstarch
  8. ½ teaspoon baking soda
  9. ¼ teaspoon salt
  10. 1 ⅓ cups all-purpose flour
  11. 4 ounces white chocolate chips, or more to taste
  12. ⅔ cup lightly salted macadamia nuts, lightly chopped (Optional)
  13. ½ cup fresh raspberries, cut into small pieces

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Line 2 baking sheets with aluminum foil.
  2. Beat butter, brown sugar, and white sugar together in a bowl using an electric mixer until creamy. Beat in egg, heavy cream, and vanilla extract. Beat in cornstarch, baking soda, and salt. Add flour little by little until completely blended. Stir in white chocolate chips; fold in macadamia nuts and raspberries.
  3. Drop dough by rounded tablespoons onto the prepared baking sheets.
  4. Bake in the preheated oven until edges are golden, 12 to 13 minutes. Remove from the oven and transfer to a wire rack to cool.

They are great, just add a little bit of flour and don’t add the heavy cream!
