Ingredients
- 1 cup butter, softened
- ¾ cup packed light brown sugar
- ½ cup white sugar
- 2 eggs
- ½ teaspoon vanilla extract
- ½ teaspoon almond extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup coarsely chopped macadamia nuts
- 1 cup coarsely chopped white chocolate
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Cream butter, brown sugar, and white sugar together in a large bowl until smooth. Beat in eggs one at a time, then stir in vanilla and almond extracts.
- Combine flour, baking soda, and salt in another bowl. Gradually stir the dry ingredients into the butter mixture. Fold in macadamia nuts and white chocolate.
- Drop dough by teaspoonfuls onto ungreased cookie sheets.
- Bake in the preheated oven until golden brown, about 10 minutes.

Tasted delicious like a good cookie but they were so dry and misshapen, despite following each detail and direction. Had high hopes but simply couldn’t eat it without dunking it in milk. Super disappointed
Made these cookies for the first time, fantastic results! I used full teaspoon of vanilla, as I did not have almond extract.. Absolutely delicious! Ladies, stop using a mixer. Hand mix batter. Make sure butter is room temp.

Ok, I doubled the nuts, and the chips because anything else just seems skimpy. Here in my area, macademia nuts are 20 bucks a pound, and when I saw they were 1/2 off I loaded up! (keep in freezer). These are heavenly cookies!
As someone who does not like almond extract, I can really taste it. It does enhance the flavor of the macadamia nuts. However, next time I’ll only use ¼ or omit all together. I might include a tad more salt, as my nuts were unsalted. Great, otherwise!
I wasn’t sure how they were going to turn out so I made half of the recipe. They turned out SOO delicious!! I left them in the oven for 11 minutes, used salted butter, and vanilla only (instead of vanilla and almond). Thank YOU! Definitely a keeper 🙂
Used an infused coconut oil as the butter and they are fire great recipe

I was so excited to try these and I was so disappointed. They are soooo bland! I think it needs more sugar, salt, and vanilla. Or less egg and less flour. Just use a whole different recipe
Delicious cookie. I actually had a white Easter bunny to chop up for the white chocolate. I was surprised that it was easy to do with a good sharp knife. I did not have almond extract so I just used a full teaspoon of vanilla extract. Turned out great. Taking it to work to share.

10 min @ 350degrees = raw cookies. I have a brand new GE Cafe wall oven and a new oven thermometer so oven temp was good. Changed temp to 325 degrees for 20 min, rotating sheet 1/2 way thru baking.

So! I decided I wanted to make cookies for my boyfriend’s family meeting them for the first time and he chose the type of cookie they’d like. I’d never made white chocolate macadamia nut cookies but I’ve made most other types and I’m the kind of baker who usually plays fast and loose with recipes. I read the mixed reviews and here’s my tips/changes: 1. Equal parts brown and white sugar, I did 3/4 cup of both. 2. Cream the sugar and butter until it’s fluffy and fully incorporate the eggs, it shouldn’t look grainy or separated. 3. I used double vanilla purely because I hate almond extract and it’s not a normal flavoring for these cookies. It’d be a good addition if you’re a fan of marzipan flavor. 4. I used salted butter but unsalted nuts then the called for 1/2 tsp salt. 5. I cooked them 6 at a time on a medium non stick pan and that helped them spread and crisp the bottom/edges. 6. Mix it by hand, beat the hell out of the wet ingredients but as soon as you add flour all you should be doing is incorporating it, I did about 15 turns with a wooden spoon, then another 10 for mixing in the nuts and I used white chips. They turned out amazing with minor adjustments and I’m at high altitude. (about 7000ft)
