White Chocolate Lime Blondies

Ingredients

  1. 1 (4 ounce) bar white chocolate, chopped
  2. ¼ cup butter
  3. ½ lime, zested
  4. 1 egg
  5. ⅓ cup white sugar
  6. 1 teaspoon vanilla extract
  7. 1 teaspoon fresh lime juice
  8. ⅔ cup all-purpose flour
  9. 1 tablespoon all-purpose flour

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 8×8-inch baking dish.
  2. Combine white chocolate, butter, and lime zest in a saucepan over medium-low heat; cook and stir until completely melted, 5 to 10 minutes. Remove from heat.
  3. Beat egg in a bowl using an electric mixer until thickened and foamy; add white chocolate mixture, sugar, vanilla extract, and lime juice. Mix well. Fold 2/3 cup plus 1 tablespoon flour into mixture until batter is just mixed. Pour batter into the prepared pan.
  4. Bake in the preheated oven until a toothpick inserted in the center comes out clean, 15 to 25 minutes. Cool blondies before cutting into bars.

These were delicious! I used the juice and zest of one lime because we like heavy lime flavor. It doesn’t make very much though. I will double the recipe next time.

We tried making this twice. . Both times it had good flavor, but it didn’t not rise much at all. It was pretty flat.

It was too sweet for me and needed more lime flavor. I wanted he citrus flavor to overide the sweet. I am not sure I will make them again unless I adapt the receipe to those changes.

11.21.16 The recipe says to “grease a 9×5 loaf pan,” but then instructs you to “cut into bars” after they’ve cooled. I have notified AR that this doesn’t make sense, probably just a typo.. Blondies typically are baked in a square pan, like brownies, so I used an 8×8-inch pan. I doubled the lime juice and lime zest and still think the lime flavor is weak. I cut into 9 servings (not 6), and on the positive side, they are quite good and quite easy to make. Garnished with a dusting of powdered sugar.
