Ingredients

  1. 1 (8 ounce) package cream cheese, softened
  2. 1 cup white sugar
  3. ⅛ teaspoon salt
  4. 1 teaspoon vanilla extract
  5. 1 ½ cups heavy cream

Instructions

  1. In a large bowl, beat cream cheese, sugar, salt, and vanilla until smooth. In a small bowl, whip heavy cream until stiff peaks form. Fold into cream cheese mixture.

Delicious.. Make sure your bowl and beaters are chilled AT LEAST 10 mins along with the heavy whipping cream in the freezer. I used 3/4 powdered sugar & 1/4 granulated sugar mixed well with the cream cheese and salt & vanilla. Whipped my heavy cream first with an extra tsp of vanilla, then cream cheese mixture, then folded the whip into the cream cheese.. The texture was perfect! I used it to frost a yellow cake, with sliced strawberries (that sat overnight in 1/2 tsp vanilla and a lil sugar) which went between 2 – 9″ layers of yellow cake with a thin layer of the frosting as well! My take on strawberry shortcake & it made me proud… Fluffy, not too sweet, and perfect texture to frost with! I will def make this again!

I love this recipe as it really is stable; it lasts for several days, even with fruit on it. I used mascarpone cheese instead of the cream cheese and reduced the heavy cream to 1 1/4 cups, as I prefer the creamy flavor of the mascarpone rather than the slight tang of the cream cheese. Either way, it’s heavenly.

The first time I made this was with my grandson and we dumped un-whipped whipping cream in the cream cheese mixture. So we made the best of it and beat it till we got to set up. Wasn’t bad even with the mistake. I made it again tonight the right way. Took some of the other reviews advice and got the bowl, beaters, and whipping cream very cold. Came out great again and better.
