Watermelon Pico de Gallo

Ingredients

  1. 2 jalapenos, seeded and finely diced
  2. Juice of 1 to 2 limes
  3. 1 bunch fresh cilantro, chopped
  4. 1 green bell pepper, finely diced
  5. 1 red bell pepper, finely diced
  6. 1 yellow bell pepper, finely diced
  7. 1/2 red onion, diced
  8. 1/2 small seedless watermelon, diced
  9. 1/2 teaspoon salt
  10. Tortilla chips, for serving, optional

Instructions

  1. Throw the jalapenos, lime juice, cilantro, bell peppers, red onions and watermelon into a large bowl and toss together. Add the salt, taste with a chip and adjust as needed.
  2. Serve with chips or on top of grilled chicken or fish, or as a side salad!

Yum! I have another recipe similar to this. I eat it in a bowl also but skip the spoon. I use these chips!!! Melt 1 Tbsp. butter & brush flour tortillas lightly on one side w/a simple cinnamon & sugar mix. You can use a pizza cutting wheel to cut them into ‘pie’ pieces. Lay on a sheet pan, bake 3-5 minutes in 325-350* oven. Depending on your oven, monitor closely. You don’t want them too dark. Use caution, they’re addictive. (Consider cutting fruit size pieces vs. chip size also.)

Fresh and fun change of pace! I brought this to Bible study – it got scarfed up and everyone wanted to know how I made it. I think you could also just serve this as a salad or side to grilled fare. It’s just the hubby and me, so this is a great way to use up watermelon when I buy one.
