Watermelon, Lime and Mint Granita

Ingredients

  1. 9 cups (about 2 1/2 pounds) seeded, cubed watermelon
  2. 1/3 cup fresh lime juice
  3. 1 cup mint, finely chopped, plus more for garnish
  4. 1/3 cup sugar

Instructions

  1. Working in 2 batches, puree watermelon in a food processor. Strain puree through a sieve and strain out solids, forcing liquid out with a wooden spoon. Discard solids. Combine the watermelon puree, lime juice, mint and sugar in a 9 by 13-inch metal pan. Place mixture in the freezer, scraping thoroughly with a fork every 20 to 30 minutes for about 2 1/2 hours, or until the granita resembles coarse crystals. Scrape 1 last time and spoon into parfait glasses or bowls. Top with a mint sprig.

This recipe is so delicious and easy to make.  Its a real crowd pleaser too.  I love having a simple go-to dessert that I know will be a big hit and won’t make me feel guilty if I over indulge a little bit.  Wish watermelon was available year round in NY.  I would make it all the time!!

Made this today for Father’s Day dinner dessert and it was DELICIOUS!!! 2 thumbs up!! I made it exactly as the recipe states, and we thought the amount of mint was perfect. It made for the PERFECT dessert after a grilled steak & veggie dinner – so light, refreshing and acted as a digestive. We will make this a must have dessert regularly. And we didn’t think it was too much work. All you have to do is put a timer on and go about your business… when the timer goes off, go fork the granita and set the timer for another 30 minutes while you keep doing whatever you were doing. It was no trouble (& fun to see how it crystalized) and WELL worth the effort – YUM all around from me, my husband, kids & grandma/grandpa.

love the show five or less that the way i cook don’t have time to cook long meals love her show where has she been all these years. what to see more of her….I am also diabetic need meals for us that are 5 or less not a of fish or seafood can’t have Iodine but she and the other meal she did on this show was great
