Instructions
- Toss 3 cups diced seedless watermelon, 1 1/2 cups diced cucumber, 1 bunch sliced scallions, 1/2 cup chopped cilantro, 1 seeded and minced jalapeno, the juice of 2 limes, 1 1/2 tablespoons olive oil and a pinch of salt. Serve on a bed of watercress and sprinkle with feta cheese. Drizzle with olive oil and sprinkle with pepper.

Light and refreshing…a perfect summer salad
Loved this super summertime treat
This was simple and delicious, adding it to my summer recipes. I was a little worried about the jalapeño as some of the people in my household aren’t fans of spicy food, but I used a mini chopper and they couldn’t even tell it was in there. My limes were really juicy so next time I’d probably only use 1, but will definitely make this again.
Well this was just wonderful! Easy, light, healthy, fresh…not much else to add here!

Love this! The sweetness of the watermelon, crunch of the cucumber, and lime juice are a perfect combination. The feta was a nice touch. I did not place atop watercress, simply ate this in a bowl.
This salad is so good. I ate it without the watercress and it was fantastic. The watercress would make it better though. It had layers of flavor from the sweetness of the watermelon and saltiness of the feta and the cilantro Wow!!! I will absolutely make this again.

I made this salad but added 3 tablespoons of extra virgin olive oil, instead of 1/12 TBS., and 1 extra Jalapeño and placed the salad on a bed of arugula, instead of watercress as that’s what we prefer. I also grilled my own recipe of cilantro, lime jumbo shrimp skewers to serve along side. Superb!!
