Watermelon Caprese Appetizer

My family devoured more than one dish of this light summer treat since they like it so much. Also fantastic for folks who adore the caprese flavor but dislike tomatoes a lot.

Ingredients

  1. 3 sprigs fresh basil, stems removed
  2. 1 small watermelon, fruit removed with a melon baller
  3. 1 (8 ounce) package fresh mozzarella cheese, cut into small pieces
  4. 2 tablespoons olive oil
  5. 2 tablespoons balsamic vinegar
  6. salt and ground black pepper to taste

Instructions

  1. Trim basil leaves into small circles about 1 inch in diameter.
  2. Thread watermelon and mozzarella cheese on toothpicks, sandwiching a basil leaf in between. Arrange on a serving plate.
  3. Pour olive oil and balsamic vinegar over toothpicks. Sprinkle salt and black pepper on top.

I used Mozarella pearls so i did not have to cut the cheese. I placed mozarella, basil, watermelon, basil, and mozarella. It as really good!! I great dish to serve on the deck in the summertime. Thank you for the recipe!! 🙂

This is a company favorite and a nice twist on the original. To try another twist, substitute mint leaves for the basil. It is outstanding.

I’d thicken the balsamic vinegar…maybe a reduction would be nice, so when I squirted it on finished skewers, it might make a defined line instead of draining off.

Nice twist on the traditional caprese appetizer that is made with cherry tomatoes. The watermelon adds a nice pop of freshness, and it really does pair well with the mozzarella, basil and balsamic vinegar. I did use a balsamic glaze that I had on hand, which really adds a nice sweetness. Thanks for the recipe!

This recipe is amazing, first thing to go at any summer get together. We love basil so we use bigger basil leaves and fold them in half, set between the mozzarella and watermelon. You gotta try this!

We loved this! My mom gave me some cubed watermelon, so I just used that and I also opted to use balsamic glaze b/c I had some on hand from another recipe. The flavors were great! This is a definite keeper for the summer~YUM! Thanks for sharing. 🙂
