Ingredients
- 3 pounds seedless watermelon, rind removed, cut into 48 1-inch cubes
- 24 mint leaves
- 6 ounces feta cheese, cut into 24 3/4-inch cubes
- 24 basil leaves
- 3 to 4 tablespoons pomegranate molasses
Instructions
- Thread a piece of watermelon onto a skewer, followed by a mint leaf, a chunk of feta, a basil leaf, and another piece of watermelon. Repeat with the remaining ingredients. Store covered in the refrigerator for up 1 hour, if desired. Just before serving, drizzle each skewer with some pomegranate molasses; serve.

Found a new favorite
I made these yesterday for an elegant tailgate, and the combination of the watermelon, feta, herbs, and drizzle just really worked. The toothpicks I had were smaller, so the watermelon chunks were about 3/4″, and I think I would do that again, since we were able to eat the entire thing in one bite. At first, I wondered if it was overkill buying both basil and mint, but I would do so again. The flavors balanced each other. I couldn’t find the Pomegranate Molasses, so I made a balsamic reduction and drizzled that instead. The only thing I found a little difficult was getting them all to stand up. It could be that by making the chunks a little smaller, it made them less sturdy. But I would definitely make these again!
